Lime Fish Tacos

Yum! I added 1/4 ripe avacado, extra lime juice and some cilantro leaves to the sauce and doubled it. I threw some cilantro in with the fish too & some cumin and used cod since I had it on hand. Very good!

Oat Bran Muffins

Yum! I tweaked to be a cholesterol lowering recipe--egg whites instead of whole eggs, omitted the oil & added 1/2 cup more applesauce, a few Tbsp of fat free greek yogurt and 1 over ripe banana for moistness. Also added walnuts & 2 Tbsp flax seed as both are good for cholesterol + raisins & put dark chocolate chips in some for my boys. Lastly, used whole wheat flour--a combination of other reviews & a few of my own tweaks. Great base recipe!! My whole family loves these truly healthy muffins---thanks!

Erica's Delicious Slow Cooker Beef Roast

Very tasty! I threw the onions & some potatoes in while I seared the meat, which carmelized the onions & cut my crock pot time since I didn't have 8 hours. Simple & delicious.

Cajun Crawfish and Shrimp Etouffe

I made this with chicken stock versus fish stock, & added sliced sausage (organic chicken sausage to keep it fairly healthy). Yum! I served it over brown rice & the whole family loved it. Great recipe!

Lighter Fettuccini Alfredo

This was very good and had a great, creamy texture. I sauteed 2 cloves crushed fresh garlic instead of powder & topped with chopped fresh cilantro. Easy & delicious!

Lemon Chicken III

Very tasty. I marinated the chicken for 2 hours & doubled the paprika. I drained the oil after removing the chicken & added all marinade & double the broth along with the brown sugar & 1 tsp of corn starch. Made plenty of delicious sauce to put on chicken! Served with brown rice/orzo on the side.

Cioppino

Fabulous! This is the 1st recipe I tried that I won't change the 2nd time around. Substituted clam juice for the water after reading reviews. Also, added shallots to the garlic & used fresh bay leaves & fresh basil (doubled all herbs) & some Emeril's Essence for seasoning. I used red snapper for a firm fish & crab legs instead of meat...I dished up the broth with a few pieces of seafood & then served the shellfish etc. in a bowl. Nice presentation!

Baked Macaroni and Cheese III

After reading the reviews, I double the sauce but not the eggs & it was fabulous! I made enough for 40 people (using 2 large pans) & it was easy to make the entire batch at one time. There would not have been enough sauce if I had not doubled it.
