No Bake Peanut Butter Pie

Double Layer Pumpkin Cheesecake

I made this using 3/4c pumpkin, 1/2c sour cream, and 1/3 less fat cream cheese. I added 1 teaspoon pumpkin pie spice and used splenda instead of sugar. I baked on a cookie sheet with water at 350 for 45 mins. I was hoping I'd love it, but it was really just okay. It wasn't creamy at all and was very strong tasting of cream cheese, which makes perfect sense since there is 16oz of it in the recipe. I'm not sure what could be done to this to make it better.

Big Soft Ginger Cookies

These were pretty good, but mine didn't look like the picture. Also, don't listen to the reviewer who said that the cookies will look underdone, but they will be done at 8 minutes. I took mine out and ended up trashing the whole batch because the were a big gooey mess. Mine took 10 minutes to cook. I didn't alter the recipe in any way.

Turkey Chili with Black Beans

This chili is low in fat, high in fiber and VERY delicious. Don't forget to rinse/drain the black beans. I actually add more cayenne because we like our chili spicy, but you can omit it altogether to make this recipe kid-friendly.

Delicious Ham and Potato Soup

This soup was really good. I omitted the ham entirely because we don't like it. I added a big handful of cheddar cheese to the soup at the end and stirred it in to give a nice depth of flavor. Will make again for sure!

Incredibly Cheesy Turkey Meatloaf

This was the 2nd time I made this and I still had very little of the cheese in the meatloaf and most of it on the bottom of the pan. Not sure what I'm doing wrong here. I halved the recipe, used panko, grated in 1/4 an onion, added 1 clove garlic, a few dashes of worcestershire and a T of parmesan cheese. It was really good, but disappointed about the cheese.

Apple Pie by Grandma Ople

This pie was so delicious! I mixed the apples in the pan with the sugars as others recommended (also added 1t cinnamon, a dash of nutmeg and 1T organic vanilla). I even did the pain of a lattice crust and it turned out wonderful. Baked for an hour at 350 and it was perfect! No need to put foil over the crust. Mine didn't even come close to getting too brown. Some people's ovens must be off.

Catherine's Spicy Chicken Soup

This soup was very mediocre. I omitted the tomato soup and whole tomatoes and used black beans instead of chili beans, whatever they are. It was just okay. I was pretty disappointed.

Chicken Pot Pie IX

I took the advice of others and boiled the chicken and veggies in chicken broth and used that in the sauce. I also added 1t poultry seasoning. I made 1.5 times the sauce and also reduces the butter down to 4T to save on fat. This saves huge on fat and cals. My serving only has 206 cals, 14g carb and 6g of fat. I love redoing recipes like this one because it still tastes great and I can have *2* pieces and stay under my calorie goal. I cooked on 375 for 45 mins and it came out perfect.

Beef Stew VI

My husband said this was the best beef stew he's has in his life. I was concerned for awhile, but it was the BOMB! I made a few adjustments: browned the beef shaken in a bag with flour and garlic pepper, used organic garlic broth, and added 3 tbps of butter and 3 tbsp of flour before adding the veggies instead of using yucky cornstarch. I also added an extra half cup of broth, an extra carrot, half potato and stalk of celery. I used a bay leaf instead of rosemary because I don't like my food tasting like Christmas trees. Would totally make this again!

Rich and Creamy Tomato Basil Soup

I altered the recipe and used one 28oz crushed tomatoes and 3, 14oz diced tomatoes including the juice from all. No tomato juice needed. I added 2 cans of tomato paste as well. I blended 1 can of the diced tomatoes, fresh basil, 3/4 of an onion and 2 cloves of garlic and added that to the tomatoes. I also added 3/4 cup of parmesan cheese, cut back on the cream by 1/2 cup and only added 1/4c butter. It was AMAZING!!! I broiled some provolone cheese on a baguette and everyone was raving about dinner tonight. Cannot wait for leftovers tomorrow.
