Honey Mustard Chicken

This is one of our favorite recipes! So easy and delicious. The only change I make is that I don't add the apricot preserves, since I never seem to have them on hand. I either substitute orange marmalade or omit the fruit jam altogether. Either way, the recipe turns out beautifully. Yum!

Spinach Brownies

This is a delicious recipe! It tastes very much like a crustless quiche. I made it exactly as written, except that I cooked the spinach in the microwave (it retains more nutrients when not boiled in water). I would make two key changes next time. 1) Reduce the salt (was a bit too salty, plus it's already well-flavored with the cheese and the onion). 2) Cut the butter in half (was very buttery--tasted good, but didn't need to be quite so rich). I also sprinkled the top with a little paprika and black pepper before baking--it was yummy!

Split Pea and Sausage Soup

This is really an excellent recipe. I've had split pea soup before, but have never really loved it. I bought some kielbasa on special this week and was looking for a good recipe to try. This was perfect! My husband and I both agree we will never have "regular" split pea soup again. Here is what I changed in the recipe: used chicken broth instead of beef, and used turkey kielbasa instead of regular. It was fantastic. I did have to add a fair amount of water; the recipe didn't say to cover the pot while simmering so some of the liquid boiled off. Next time, I'll be sure to cover it. Thanks for a great recipe!

Rich and Creamy Tomato Basil Soup

This is a deliciously decadent soup...so good that it is dangerous to make often. I substituted light cream instead of heavy and it still tasted wonderful.

Whole Wheat Bread III

This bread is super-easy to make and has a delicious nutty-crunchy texture. The only unfortunate thing is that, like all homemade breads, it gets stale quickly. Plan to eat it in within 2-3 days. It's wonderful when sliced, drizzled with honey, and eaten while still warm. Mmmmmm...

Ultimate Maple Snickerdoodles

Snickerdoodles are my husband's favorite cookie, and maple is another of his favorite flavors. I made these cookies and the whole batch was gone in less than 24 hours! Absolutely delicious. I also did not have maple sugar, and just used cinnamon and granulated sugar. They were marvelous.
