French Bread Rolls to Die For

Pizza Casserole

Whole family loved it. Didn't have mozzarella, so I used cheddar (put an extra layer of cheese in the middle). Didn't have pizza sauce so I used a jar of Classico Four Cheese pasta sauce. Didn't have egg noodles, used rotini. Instead of pepperoni, I used calabrese salami. After frying up the ground beef, onions, garlic and peppers, added a bit of water and a beef boullion cube for extra favour, let it simmer for a while. Also added some black pepper. Really good!

Classic Waffles

LOVED these! Original recipe made 12 waffles (we made 1.5X for our family of 6, made 18). I added a little less baking powder (4 tsp for 1.5X), doubled the sugar (6 tbsp for 1.5X), didn't warm the milk (forgot) and beat the egg whites separately and folded them in at the end. Yum!!

Greek Style Potatoes

I used russet potatoes, peeled, cut up, added about 1/2 cup of water and microwaved for a few minutes to get them partially cooked. Added a boullion cube, olive oil, lemon juice, pepper, thyme, rosemary, pepper and fresh garlic to the bit of water already in the dish. Baked at 400 F with no lid for about 30-45 min. Yummy!!

Mrs. Sigg's Fresh Pumpkin Pie

It was good, not sure it was worth the effort of the pumpkin but it was kind of fun to try. I used a can of sweetened condensed milk instead and just 2 tbsp of brown sugar.

Cranberry Sauce

It was really good. Threw in a cinnamon stick while it simmered. Got nice and thick after sitting, made it a couple of days in advance.

Cranberry Orange Loaf

Yum! Used lemon zest instead of orange (that's what I had on hand) and used the juice from the lemon plus orange juice to make up the 3/4 cup. Also made a glaze of icing sugar, OJ and vanilla as others have suggested and poured it on while it was still warm. Made a it a second time with blueberries instead of cranberries, also very good.

Grandma's Lemon Meringue Pie

Very good, made it exactly as recipe described except I passed the lemon filling through a sieve as I filled the pie shell to remove the zest and any lumps.

Mexican Rice II

Banana Pancakes I

Cajun Chicken Pasta

Didn't really notice the cajun flavour a whole lot and it was a bit oily, but still pretty good. Next time I might coat the chicken breast in seasoning, cook it and then slice it and put on top of the pasta.

Bacon Wrapped Water Chestnuts II

These were pretty good. I fried the bacon until it was almost done before wrapping around the chestnut and then it didn't need to be in the oven very long. The sauce was great, I used ketchup and a bit of hot sauce instead of chili sauce. I just kept wishing it was a scallop in the middle and not a water chestnut.

Honey Baked Chicken II

Yum! Made this for dinner last night, we loved it. I used boneless, skinless chicken thighs, cut back on the butter, used dijon mustard and added some garam masala with the curry powder. Served it with brown rice and mixed steamed veggies. The whole family enjoyed this meal.
