Busy mom of 2 boys (16 & 12), married to my best friend for 17 years and work full time outside the home.
My favorite things to cook
Anything Mexican or Italian! We are adopting a more healthy whole foods approach so I am adopting more whole foods, fresh fruits and fresh veggies.
My favorite family cooking traditions
For my boys (hubby included) birthdays they get to chose to eat at the restaurant of their choice or have me prepare the dinner of their choice. My guys pick my cooking 99% of the time :).

Blackened Chicken
Very Spicey! This is my first time making Jerk chicken and my family liked it. I paired it with a salad of baby mixed greens and roasted cauliflower. I had to cook it much longer than 5min in the oven, but I also made more chicken. I cooked 6 chicken breasts for 30 min and they came out just right.

Heather's Cilantro, Black Bean, and Corn Salsa
Excellent salsa! I made a few modifications. I only used 1 can of black beans (seasoned), and 1 can of sweet corn. I added a fresh diced tomato instead of canned, and a jalapeño pepper for some kick. I omitted the onions, and bell peppers, olive oil and since my boys don't like avocado I served the avocado on the sided sliced with a pinch of cayenne pepper and fresh lime juice. YUM!

Italian Nutthouse Broiled Tomatoes
Excellent recipe! I only gave 4 stars because of the MSG, there is NO reason for it. The kids and I loved it made a great side dish.
