Sweet Potato Cake

I made this cake twice and each time the people I served it to said it was delicious and moist. I didn't make them in two separate pans but in a single 9" spring form pan and baked it for 40 minutes instead of 30 minutes. Another thing I did do the second time around was whisk together the mashed potato and the milk to blend it more evenly as the first time the potato was more clumpy. I also reduced the white sugar to 1/2 a cup as I found it a bit too sweet.

Whole Wheat Snickerdoodles I

I love cookies but am also a nutritional freak, so when I found this recipe for whole wheat cookies, I had to try them. This was my first time making Snickerdoodles, so I had nothing to compare them to. Out of the oven, these cookies are nice and soft. I tried them again the day after and they are crisp around the edge and still nice and soft in the centre! As for the whole wheat part, I definitely could taste that they were whole wheat but I enjoyed that aspect. As one other reviewer mentioned, it gives it a bit more of an "adult" appeal but my cousin still loved these. My aunt says these are similar to her Ginger Snap cookies, so I may try adding a bit of ginger powder next time to see how they turn out. Great cookie! Highly recommended.

Lemon Curd Tassies

I might have not rolled the dough enough but I could barely get 2 dozen tarts when I used smaller cutters than specified in the directions. Next time I would double the tart dough recipe and absolutely use the 3-inch cutter as the tart shrinks quite a bit after baking. Other than that, these are awesome. Just enough lemon to sweetness flavour!!
