I made this last night and it was fabulous. Plus, it fits so well into my busy schedule. Took about 10 minutes to prep. That means a lot, since my rule is, it can't take any longer to make than it takes to eat -- at least on weeknights. :>) This had a ton of flavor, spicy but not too spicy. It could be a side dish or a main dish. And quite frankly, for fiber and protein, I think I got my daily recommended amount just out of this one dish. I only used one can of beans, since so many reviewers recommended that. I could have used a few more, but not an entire can, so it wasn't worth opening another one. I brought it to work today for lunch, since so many people said it tasted good cold. If it does, this is definitely a dish I will do over and over.
