Baked Apple French Toast Casserole

I made a triple recipe of this to serve for a large group, and it was a big hit! Not overly sweet, but lots of great flavor. I only made very minor changes, using gluten-free challa instead of the French bread, and Fuji apples instead of Granny Smith (that's what I had on hand) which I chopped in the food processor with the skins on instead of peeling and dicing. I let it sit in the refrigerator for about an hour before baking, so that all the liquids could soak into the bread really well. The texture and flavor were fantastic, and I'll be making this again.

Parmesan Crusted Chicken

This has been a favorite in our house for years, made exactly according to the recipe. I do pound the chicken breasts to make sure that the edges don't dry out while the thicker parts get fully cooked. I recommend you try it as written before you start making changes!

Honey-Ginger Grilled Salmon

This was a great basic recipe, and very flexible. I didn't measure everything carefully, and added a little olive oil to the marinade as well. I also cooked my salmon under the broiler instead of grilling. My tip: If you would like a delicious glaze to drizzle over the cooked salmon, don't discard the marinade, but pour it into a pan. Bring to a boil on the stove, and cook until the sauce is reduced to the thickness you desire. Yum!

Mexican Rice II

Just what I wanted! Served with enchiladas and refried beans to a group of 20, and everyone thought it was great. I did add a some cayenne pepper just to give it a little kick.

Sarah's Banana Bread Muffins

Delicious! I tried several other recipes, and none had the dense, banana bread texture I was looking for. I took the advice of other reviewers and changed the temperature to 325, and they were still done in 25 minutes. We're not big fans of nuts, so I omitted those and added a teaspoon of vanilla and 3/4 cup of chocolate chips. Out of this world!

Bread Machine Challah I

My family and I love this challah! I made it several times in my bread machine, but my machine broke. We loved this bread so much that I made it by hand for a while. Now I use a food processor with dough hooks. After letting it rise for about an hour and a half, I braid it, let it rise again, brush it with beaten egg, and cook it in the oven. This bread has just the right density and texture, and the flavor is very rich.

Waffles I

These waffles turned out great! My waffle iron can only cook two waffles at a time, so I kept them warm in the oven until the whole batch was cooked. They stayed nice and crisp, and were extremely light. My whole family loved them. I did use a wisk instead of a hand mixer, and I sifted the dry ingredients together before mixing them into the wet ingredients.
