Slow Cooker Split Pea Sausage Soup

This is an excellent, easy split pea. I used two cans of chicken broth, a can of beef broth, two cups of water and a cube of beef boullion (it's what I had in the pantry). I also used mild italian sausage, cut of the casings, and browned it before adding to the soup. Very flavorful.

Simple Turkey Chili

Good taste when you want a classic, meaty chili. I added a can of pinto beans and used 1 TB chipolte chili powder and 1 TB regular chili powder. Spicy and rich for a turkey chili.

Greasy Chicken

I made this recipe with boneless, skinless chicken breasts and it did not seem that greasy at all. It was more of a rich, soy flavored-stir fry. The chicken was flavorful. I'd say it is a quick and simply way to cook chicken thighs on the stovetop.

Beefaroni

I substituted a diced one lb. keilbasa sausage for the ground beef and added a can of diced tomatoes with peppers and one jar of spaghetti sauce instead of the tomato sauce. Tasty!

Spicy Chicken Thai Noodle Soup

This is a very good easy soup, although it has many ingredients it is simple and also pretty light. I substituted paprika for the cayenne pepper. I could not find a red chile so I used a jalepeno, also I broke the noodles into 1" pieces.

Saucy Chicken Cordon Bleu

I could not get this to work, because I could not get the chicken pounded flat enough and had to bake for an extra hour or so. By that time I was so fed up I did not want to eat it.

Chris's Incredible Italian Turkey Meatloaf

I have to admit I did not make this recipe exactly as directed. I used ground turkey and chicken sausage instead of turkey sausage. And I used a bit more sauce than indicated just to "finish off" the jar. Alas I did not like the results, although my husband did. I found the texture of the chicken sausage unappealing. So if you try this recipe be cautious with substitutions.

Tomato Pie I

Prepared as directed, this recipe is really greasy and very rich, but flavorful. If I made it again I would probably leave out a lot of the mayonnaise and some cheese. Too rich for us to eat more than a small slice each. Seemed a very southern dish to me.

Cumin-braised Brussels Sprouts

This is my favorite way to cook brussels sprouts. They come out tender and flavorful. I have substituted ground cumin for the cumin seed, and substituted italian seasoning mix for the dried basil, and in both cases the result was similar to published recipe. I also suggest substituting chicken broth for the water.

Stuffed Peppers

This is a great basic version of the classic stuffed pepper recipe. I used two huge yellow peppers and one red one and halved the recipe. I also added cheese on top but did not have enough sauce it seemed so I basted with chicken broth.

This is one of the first recipes I made after discovering this site, and I still find it delicious and easy to make. Great simple hearty chili that can be assembled in a hurry from mostly canned ingredients. Easy crowd pleaser served with cheese on top and cornbread.
