Brown Sugar Cut-Out Cookies and Icing

I loved this recipe and the cookies tasted great! With so little liquid initially and so much flour, the dough looked like finely crushed graham cracker. Then adding milk, a little at a time, got the dough to a consistancy I liked. Sort of clay-like, somewhat stiff. It was super easy to roll, GREAT for cutouts. I loved the idea to use wax paper under and on top. The cookies cooked up perfectly. The kids and I like soft cookies, while hubby likes more crunch. We timed baking accordingly and was great both ways. Yes, it's not that sweet - but that's what makes this an awesome icing cookie. You don't get bowled over by the sweetness. AND it's not as hi fat as other cookies. A keeper? You bet!!

Coconut Bon Bons

These were decadent and laid out more like a truffle than a cookie. The condensed milk makes this cookie intensely sweet, giving me the perfect opportunity to drizzle some good quality bittersweet chocolate on top. It complimented the sweetness perfectly and asthetically. Folks went out of their way to let me know the bon bons were awesome.

Ziti Chicken and Broccoli

Thumbs up. Though it's high in fat (44gms) so tried to lower. Changed heavy cream to evaporated milk. Didn't bread the chicken and lightly fried. Also based on our taste, we left the chicken in larger pieces. Not a big chopped chicken fan. Kids really enjoyed.

Delicious Pumpkin Bread

Great recipe. We used applesauce instead of oil. Added raisins (instead of walnutes), and it was a winner! Oh, and a little extra cinnamon. :)

Spinach Pear Salad with Warm Vinaigrette

Loved this salad, and so did my DH! I backed down a little on the oil. And used Goats cheese instead of blue. Lastly am not a big fan of canned pears. So I recommend ripe to overripe (sweetness is key here) pears.

Weekend Brunch Casserole

Had to bring a no-meat casserole to a church function and decided to try this w/out sausage. Turned out great! As recommended added an egg and 1/4 c. more milk. Also added a little onion powder and sage powder to enhance (esp. since there was no meat). Also combined two kinds of cheddars (sharp and a light vermont.) The top was a little on the dark side, so might recommend cooking with foil until the end - but that will increase cooking time.

Snow Flakes

Just made them tonight-yum!! Changed the follwing: butter instead (straight from the fridge), omitted the orange zest, and used neufchatel cheese, and bakers sugar instead. We have two types of presses, worked great on both, and the kids did them (so it was slow) and the dough still held up! This is a keeper!
