Taco Beef and Pasta

We liked it! Best of all, I had all ingredients on hand, except for cilantro, which we skipped. I used Laura's Lean Beef Top Round, about 1 lb. I had a fajita seasoning mix, which I coated the beef in - it almost gave it a lime-fajita taste, the can of black beans, and I added a bag of steamfresh corn. It was good! And easy! And I didn't have to go to the store!

Toffee Pie Bars

Similar to a recipe I made, but without graham crackers. I like the addition of the graham crackers. My suggestion would be to closely watch it while it is baking - mine did not need 10 minutes. Also, I used a rubber spatula to spread the melted chocolate chips around. Yum!

The Best Banana Pudding

My husband is a cooked banana pudding snob, and even he agreed it was really good!! His first impression was that it was too sweet, but after all the things were together, he liked it. I had made this for a BBQ we hosted for about 25 friends. This was one of the few thigns that was completely gone at the end! Everyone raved about it! I'd definitely make it again, and I'd consider decreasing the sweetened condensed milk a little.

Turkey Gyros

First and foremost, this was delicious! I just happened to have Turkey Tenderloin, purchased on clearance for $2 a pound on hand, and had gone to the NC Farmers Market and purchased fresh goat Feta cheese w/ Rosemary & Garlic. I wanted to use both items, and this recipe fit the bill. Then, I just happen to have on hand the Tzatiki ingredients as well. Let's say it was meant to be. Suggestions: make the Tzatiki sauce (cukes, onion, sour cream, dill, lemon juice) before browning the turkey becauce. Also I did cube the turkey because I had pretty small pitas on hand. Speaking of the turkey a 1/2 pound of turkey is not enough for 4 people. We had almost a 1 lb tenderloin and it worked out nicely between 3 people. We warmed those in the microwave on the bakery/bread setting, and they were perfect. The whole thing came together quickly. My mom, and my husband were both impressed. Thanks for this one, it will definitely become part of my rotation!

Artichoke Spinach Dip

I've now made this recipe twice. Once for a dinner party appetizer for a few close friends and a second time for a BBQ we were hosting. It makes A LOT, so either halve the recipe for a smaller group, or have lots of leftover. WHich is not necessarily a bad thing, because my husband and I have enjoyed reheating the leftovers and eating them!! Anyway, I endorse adding the Parmesan cheese and to give it a little more pizzazz, I added about a half packet of dry ranch dressing mix the second time. I got many rave reviews from the 25 friends and neighbors we had over for the BBQ we just had!

Delicious Artichoke Dip

Mini Ham And Cheese Rolls

Made these for my Bunco group and they went over well - I made plenty of the butter mixture w/ yellow mustard, poppy seeds and the chopped onion. I used dinner rolls and baked in a foil lined 9x13 glass dish, which made for easier transport & serving. My husband just had to eat one before he left, and I think only 3 were left over by time I got home. Not bad considering there were 6 other dishes and only 12 of us!

Cooking Light magazine's Lazy Lasagna

Maybe I just do not eat high fat lasagna enough, but I appreciated this dish. I thought it was great. I did use Mozzerella instead of cheddar, and 1% fat cottage cheese and 93% lean ground beef. Regarding the sauce, I think the key is to just look for a lower calorie sauce, like 60-90 calories per 1/2 cup and no more than 5 fat grams per 1/2 cup. I thought it was great and the leftovers are great too!

Amazing Pork Tenderloin in the Slow Cooker

Wow! This was surprisingly good! I did not have the Onion Soup Mix, but subbed a couple tablespoons of a product called Onion Onion. Other than that, and adding 8 oz of mushrooms to the top, I made it as instructed. The mushrooms were a delicious addition and soaked up the flavors of the au jus. Also, I made it the night before, so it sat overnight in the refrigerator in the crockpot marinating. My husband started it at lunch, so it cooked 5 hrs on low and it was perfectly cooked. Even my 2.5 year old ate it up, and he is picky!!

Six Threes Ice Cream

Very yummy. I made it about 1/2 to 2/3 recipe since it's just my husband and I. Next time, I think I'd add more bananas and maybe some banana extract to make a more banana-y flavor.

Rich Chocolate Chip Toffee Bars

AWESOME! I made them for a Super Bowl party and they were gobbled up! Had leftovers and brought them to work. Everyone loves them! Good idea to cut into small pieces, as they are very rich. I used toffee bits, and milk chocolate chips and pecans. Wonderful!!! Will definitely make again, though to me they were a little labor intensive!

Baked Brie in Puff Pastry

I made this for a baby shower and it was a huge hit! It was devoured! My husband was hoping there would be leftovers, but there were none!!! I love this recipe! Another good variation is to use some type of jam, raspberry or strawberry works well!

Quick Chicken Marsala

This was really good, easy & quick. I'd tried a version with the cream of mushroom soup. Golden Mushroom gives a much better flavor. Also, I added a can of mushrooms & chopped up an onion and browned it with the chicken.

Bodacious Broccoli Salad

Very good. I used bacon pieces, added raisins and chopped pecans. Had this as our salad for Thanksgiving and it was definitely a hit! Will definitely make it again!

Easier Chicken Marsala

It was good, but just okay good. I added the cream of mushroom soup as well. My husband absolutely loved this - but I've had really good chicken marsala at restaurants, and I can't say it was that good. I'd make it again though.

Simple Beef Stroganoff

I made this last night, but I didn't have this recipe, I threw it together. The changes I made were adding 1/2 onion, one can of mushrooms, and about a 1/2 cup of milk. I whisked the milk, sour cream and soup together and then added it to the ground beef. I would have used fresh garlic but did not have any on hand. I also added a couple of dashes of Worchestshire and Hot sauce. My husband like it, and it made a lot. I think it needs a little more flavor - beef broth might help.
