First and foremost, this was delicious! I just happened to have Turkey Tenderloin, purchased on clearance for $2 a pound on hand, and had gone to the NC Farmers Market and purchased fresh goat Feta cheese w/ Rosemary & Garlic. I wanted to use both items, and this recipe fit the bill. Then, I just happen to have on hand the Tzatiki ingredients as well. Let's say it was meant to be.
Suggestions: make the Tzatiki sauce (cukes, onion, sour cream, dill, lemon juice) before browning the turkey becauce. Also I did cube the turkey because I had pretty small pitas on hand. Speaking of the turkey a 1/2 pound of turkey is not enough for 4 people. We had almost a 1 lb tenderloin and it worked out nicely between 3 people. We warmed those in the microwave on the bakery/bread setting, and they were perfect.
The whole thing came together quickly. My mom, and my husband were both impressed. Thanks for this one, it will definitely become part of my rotation!
