Swiss Chicken Casserole II

this recipe is a real winner: substitute milk with white wine, use 1 chicken breast cooked and shreaded, add a carrot chopped, 1c broccoli florets, 1c cooked pasta and monterey jack instead of swiss, subtract the butter...throw it all together (pasta on top...pour soup on top of everything last) into a pie dish and heat as directed...yummers!

great tasting lasagne...instead of 8 chopped tomatoes, i added a 28oz and 14oz can of diced tomatoes...it worked out nicely, thanks lisa!

Trinidad Stewed Chicken

really tasty stuff! made a few adjustments: used 2 whole chicken breasts (sliced 1/2 inch thick), eliminated the green onion and instead marinated with 1/4 cup minced onion, used 1/2 cup water and a whole can (14oz) coconut milk. cut the cooking time from 20-30min to 5 min (sliced chicken breast cooks real fast)...and at the very end, threw in a small bag of frozen vegetables (i happened to have a bag of stir-fry vegetables...Cascadian Farm organic). delish, and good for ya!

Truck-Stop Buttermilk Pancakes

i was a little skeptical about freezing this recipe, but sure enough it tasted great defrosted, too. i made the recipe as is and froze the batch in 4 parts (using zip-lock freezer bags)...so pleased that i have 4 tasty breakfasts for my family waiting in the freezer! and yes, this recipe tastes a zillion times better than any pancake mix from the store.

Eggplant Parmesan II

believe all the hype...this recipe is GOOD! followed other's suggestions: 1) dip eggplant slices in egg then toss them in a large zip-lock with the bread crumbs...and shake away, 2) bake for 10 min. each side. i used cheddar instead of mozzarella because that's all i had and it turned out yum-a-licious! thank you Dolores Ryan!

EAGLE BRAND® Banana Cream Pie

excellent in a graham cracker crust...line the bottom and sides with banana slices. also, no need to "dip" each banana slice in lemon juice...just put all the slices in a large bowl and add a few tbs lemon juice then toss with your fingers until all are coated. great recipe!

Cottage Pudding - Upside Down Cake

works well in an 8X8 dish also. used pineapple with marichino cherry in the middle of each. best part was i made the butter/brownsugar/pineapple part, put it in the 8X8, covered it and put it in the frige (for 24hrs) until i was ready to make the dessert. it was easy to whip up the cake part then add it to to what i had prepared earlier. had it cooking in the over during dinner...turned out great! really tasty!

used 2.5c oats, 1/2c brown sugar, no wheat germ, and 1/4c vege oil + 1/4c apple sauce. made drop cookies (heaping TBS), baked for around 10 minutes and they turned out great!

Chocolate Caramel Candy

ok...all I can say is "wow". this is sooo yummy! just finished making a batch with semi-sweet chips...holy moly. in cold weather climes (it's 25 degrees outside), just set it outside for the in between steps, instead of the frige: only needs 15 minutes each time on the porch versus the 1hr in the fridge. this stuff is deadly!

very easy, VERY tasty recipe. put the custard ingredients in a mixing bowl and used a hand mixer. used 8X8 dish for the recipe and it worked out great...it got rave reviews...what more can i say?

made this recipe with ground beef (85% lean), turkey (dark meat) and lamb. folks really loved it; although the lamb and turkey kabobs were more popular than the beef. wrapped a large handful onto each skewer, the recipe made 6 skewers. grilled then cut them into 1 inch pieces for pita stuffing...excellent recipe!
