Pumpkin Chipotle Pasta Sauce

This was OK -- admittedly I probably overdid with the chipotle since I added chicken marinated in chipotle with adobo. I might have enjoyed the flavor with less spice, may try again.

Poblano Corn Chowder

I only used 1 qt half&half and a pint heavy cream (the rest, chicken broth) and it was STILL too rich, so next time, more broth! I got no heat from the 2 poblanos, so added cayenne (didn't have c/d/arbol, jalapeno may do the trick, too). I reduced the sugar a bit (just add to your taste). The roux (flour + butter mix) kept clumping, so maybe I need to add earlier? I will add more corn next time too, and fresh cilantro was a nice garnish.

World's Best Lasagna

I've made this a couple times and it's always a hit. I make the sauce a day ahead for best flavor (and so I just need to assemble and cook the night I need it). Leftovers (if any) can be frozen in individual serving sizes. Yum!

Poblano Chile Enchiladas a la Gringa

My BF doesn't doesn't like spicy foods and he loved it. I thought it a bit too bland. After roasting and de-seeding, there was little heat in the peppers. Next time I may add a jalapeno, also it needed salt & pepper.
