I'm retired and working in a second career as a high school Science teacher.
My favorite things to cook
Anything Mexican; homemade lasagna(the more, different cheeses the better!); homemade, 2-day seafood gumbo (only two of my grandchildren, and none of my kids like this, so I hardly ever get the opportunity to cook it).
My favorite family cooking traditions
Southern New Year's Day dinner, including blackeye peas and ham hocks, cornbread, and all the mustard greens I can eat!
My cooking triumphs
I can whip up something delicious in no time, and without referring to a recipe, using whatever we have available.
My cooking tragedies
Every type of meat I cook on the grill ends up the same way! How would you like your steak? It only comes one way: third degree!

Best Green Bean Casserole
I served this dish with Thanksgiving dinner, and even my grandkids raved about it! The only modifications I made were steamed fresh green beans instead of canned, and I added a few cubes of Velveeta cheese to the beans and mushroom soup. Microwaved everything, mixed the melted cheese and beans well, then added the shredded cheddar cheese and fried onions on top. Baked until the the onions were slightly browned. SO good!

Roasted Asparagus and Mushrooms
This did not work for me. I followed the recipe to the letter, but decided to add whole garlic cloves to the mix. I think that I added too much olive oil by sprinkling some over everything just before putting it into the oven. My oven is an electric/convection type, and I think it cooks must faster and hotter than average. I didn't take that into account. The asparagus remided me of burned bamboo shoots, but the mushrooms and garlic were WONDERFUL! Almost set off the smoke alarms with this recipe, too.
