Pumpkin Custard Pie I

I made this without the crust as I tend to eat mostly gluten-free. I baked it in a casserole dish. It tastes delicious, a light custard flavour, rich in pumpkin pie taste(I used half and half not milk; 1/2 cup sugar total and added some cardamom as well. mmmm :-D

Strawberry Jam

It is a bit late to make Ontario strawberry jam but I thought that I'd give it a go with California strawberries. I didn't quite have enough lemon juice- shy about 2 TBSP; and I had to use half brown sugar and half white granulated (and used 2.5 cups) :-/ (This was not exactly a planned jam making adventure!) I added a splash of Elderflower syrup to make up for the missing lemon juice. I used my immersion blender to mash the berries up once they had begun to get soft. I swear my thermometer is off b/c after 1.5 hrs of a rolling boil it never rose past 205. I did the plate test and it passed. Just put it in the jars, so I'll see how it sets...

Yummy Honey Chicken Kabobs

Excellent flavour. I used Tamari sauce because it is gluten free (instead of soy) and we had an onion hater over for dinner, so they were omitted (the onions not the dinner guest!) I left the chicken to marinate for 10hrs, it was amazing. Everyone at the table wanted the recipe. I served it with tzadiki sauce just in case the chicken was a bit dry, but it wasn't...

Lime Fish Tacos

The fish was lovely with a rich lime favour, we used wild cod with 2 TBSP minced garlic. I added chopped green onions, and red pepper as we didn't have any lettuce on hand, but as my husband aptly said, "lettuce is over rated". Next time I will add avocado and minced red onions- instead of the green onions for better flavour and more texture variety. Oh and I used paprika not hot sauce...
