Texas Enchilada Sauce

This is really really good! I have made it twice now and love it. I use half for enchiladas and the other half I put in the crock pot with raw ck breast and cook several hours until chicken shreds easily. We eat it like tacos on corn tortillas, or my fav is the ck on top of a crispy corn tortilla with a hard fried egg on it for breakfast. Sprinkled with feta cheese and avocado slices it is just like a dish I had a brunch at the Four Seasons in Dallas, TX. Delish!!

Honey Baked Chicken

really good. I pounded my chicken out thin and cooked the chicken without the sauce for the first half of the cooking time, and added the sauce and baked it for the second half. Everyone loved it.

Party Punch IX

This was fabulous!! I served it at a bridal shower and used berry blue jello. When it was combined with pineapple juice, etc. it made a teal color and matched my theme perfectly. Even better than the color was the flavor. I actually had people saying the punch is "amazing". I will use this again and again. We totally ran out because everyone was gobbling it up!

Peach Cobbler VI

This was a really good, pretty quick recipe. I followed directions exactly and the dish disappeared in no time. My only change next time will to use more peaches, it seemed a little short on fruit.

Jayme's Sweet Summer Berry Dessert

This was very simple and yummy. Kids loved it. It was a little sweet for my taste but that may have been because I did not have quite as many berries as suggested, but it was still good. I only had blueberries and strawberries and the strawberries were not very sweet, so the rich cream pulled it together nicely.

Southern Peach Cobbler

really really good and simple. It doesn't get any easier than this. I made another from scratch and after all of that work I actually thought this one with the canned peaches was better! Try it, you will like it.

Chocolate Lovers' Favorite Cake

This cake was really good, I rated it 4 stars because the reviews were a little over zealous in my opinion. It was really good, but not earth shattering. I did not glaze or frost mine, it didnt need it. Serving very warm is a must, it makes it gooey and yummy. For presentation I did it kind of like the picture shown here, but I dipped long stem strawberries in chocolate and lined them around the cake on the cake plate. I also put strawberries in the center of the cake and dusted it lightly with powdered sugar. Very pretty. It was a nice b-day cake for my mother in law, presentation was great but no raving on the taste from her.

Salmon with Pineapple Tomato Salsa

This was even better than I had expected and I didnt even have a couple of things on hand. I followed the others reviews and baked the salsa on top of the salmon. I left one piece without the salsa for a picky child, but the juice flavored that one nicely too. The pineapple and tomato combo was nice and tangy. I used a little purple onion because I didnt have shallots. I also realized that I was out of chicken broth so I just poured the salsa all over the fish and baked until flaky. I let it set a few minutes so the soy/juice thickened some. Delicious! My teenage daughter ate two pieces and went on and on about how great it was!

Ceviche Self-Portrait

This was really good, much like the fresh ceviche that I recently had in Belize and have been craving. I added a little more spice with jalapeno and also added chopped cucumber and carrots. I think they are a must.

Baked Asparagus with Balsamic Butter Sauce

This is a really great, simple recipe. I had been making my asparagus in white wine from another recipe on this site and my husband has requested that I only use this one from now on. Even my kids eat it up in seconds.

Chicken Tetrazzini for a Crowd

This recipe is really great. Even my kids who are picky eaters ask for it. It does make enough for a crowd so I suggest scaling it back, or plan to freeze half for another dinner. I haven't tried freezing it yet, so I cannot say how that turns out.

Slow Cooker Beef Stroganoff I

this was a really creamy yummy version of stroganoff. Kids liked it alot! I did not use the fresh onions, but substituted with a light sprinkle of dried onions.(picky kids) I also used stir fry beef strips because that is what I had on hand. They are very tender and the sauce is tasty. I will make again regularly. Great over egg noodles with crust bread.

Baked Pineapple Casserole

This is a great recipe, and it does go nicely with ham. I cooked it just as stated and it is sweet, but everyone in my family enjoyed it. Especially my son who is a very picky eater!
