I have been cooking since I could read a cookbook and reach the stove. I cook when I'm stressed and I cook when I'm happy. I feel very creative in the kitchen.
My favorite things to cook
I most like to cook casseroles and Mexican and Italian dishes. I always like to make most recipes just a little bit healthier in some way.
My favorite family cooking traditions
My favorite tradition is Christmas cookie baking. Even though I bake all the time, I love the the excitement of Christmas baking.
My cooking triumphs
I don't have any particular one. It has just always brought me a lot of pleasure to see my family enjoy my cooking and I love the compliments.
My cooking tragedies
My worst tragedy was when I was twelve years old, I was melting sugar in the iron skillet making peanut brittle. While I was stiring the melted sugar, I dropped a glob of it on my wrist. Talk about a blister. I finished the peanut brittle and everyone enjoyed it.

Moist Banana Muffins
These are so moist and absolutely delicious. I used very ripe bananas that had been frozen. I just mashed the bananas and stirred in the sugar and mayo and added a generous teaspoon of vanilla. Stir in the dry ingredients and you're done. I did not even add the chocolate chips. This is my new go to banana muffin recipe. Thank you for sharing this great recipe scholzy.

Low Carb Zucchini Pasta
It's almost hard to believe just how good this really is. I just got my Vegetti yesterday and couldn't wait to use it. I added two cloves of garlic with the sautéed zucchini, no water needed. I topped this with homemade meat sauce and shredded parmesan cheese. Thanks for sharing this recipe DinnerMomma.

Homemade Vanilla Extract
This has such a great flavor and so much fun to make. I made it in August, and used it for all of my Christmas cookies and fudge. It's nice to have and to use very generously in all of my recipes. I won't be buying any more vanilla. Thanks for sharing your recipe RE_BEKAH
