Coffee Jelly

Doubled the recipe and used: 6 tsp gelatin 60ml hot water 75g brown sugar 950ml water 3 tbls instant coffee powder using the same method. I whipped up some cream with sugar and piped rosettes onto the set jelly and chilled it some more. Perfect together!

Calabrese Style Spaghetti

Really quick and easy recipe! :) I baked one chicken breast seasoned with 2tbls lemon and honey and a sprinkle of herbs, salt, and pepper, as a side dish. I also added one whole head of broccoli and a handful of sliced olives. I used mozzarella cheese, and seasoned the pasta with 2 tbls mixed herbs (I cooked for 5 people) and just a tsp of salt. I would recommend 2/3 of the butter amount. Our spaghetti was literally dripping in oil. Though it wasn't bothering me too much, half of my family were complaining it was too oily. Great recipe anyway and I think it would taste great with baked honey lemon salmon too! :D

Hot Mocha Drink Mix

My changes were 250g white sugar 86g cocoa powder 120g milk powder 70g non dairy creamer 10g instant coffee granules 1) combine together and blend till fine powder in a blender. Stir 1/4 cup unpacked mixture into 250ml heated milk and stir. Recipe taste good with milk. But with hot water, it taste absolutely terrible! I had to dump the hot chocolate water cup away! Later, I microwaved 250ml milk in the microwaved and stirred in 1/4 cup (unpacked) chocolate mixture in. Tasted so much better! Plus do not double the coffee flavor especially if you're making these for children. The coffee taste was definitely too strong which put even me, a coffee lover, off! Also, please do not feel greedy and make yourself more than one cup as it is extremely chocolaty and will taste terrible if you overdose the drink. :)

Carrot Cake III

fantastic recipe that tasted soft and moist overnight in the fridge! I used 150g brown sugar and 150g white sugar. For the frosting, i cut down the sugar to 100g and that was enough for though it wasn't as fluffy as it would"ve been in I'd used the full amount (blek! too sweet!)it was fluffy enough and stiff enough and spreadable! Thanks for the recipe!

Lemon Cupcakes

I made mini cupcakes with this recipe and baked them at 180C for 14minutes and the changes I made to the batter were instead of using 400g of sugar, I used 340g. I also used the seeds of one vanilla pod to replace the vanilla extract. this gave the cupcakes lovely spots! also for the frosting, I added about 5ml more lemon juice for I wanted a nice lemony flavor. These cupcakes were great!

Delicious Chocolate Cornflake Cakes

Great snack to munch on! I used half dark compound chocolate and half chocolate chips so that it won't be so sweet. I kept them in the fridge uncovered overnight and tried them the next day. I prefer them cold rather than just at room temperature. Great recipe!

Donut Muffins

this recipe is great but I think with the sugar coating, it's too sweet. I would recommend cutting down the sugar in the batter because the coating will make the whole thing sweet enough. I also cut down the nutmeg powder and used only 1/2 a teaspoon. They were perfect like this!
