Mediterranean Chicken
Made this last night almost exactly to spec, with only minor changes: I used canned, diced tomatoes since I was short on time, and had to use dry basil since I forgot fresh basil at the store (it was fine). Once it cooked, I cut up the chicken into bite sizes, and served it onto a salad made with romaine lettuce leaves, a raspberry vinaigrette, cucumbers, more olives, and feta cheese. I definitely want to include artichoke hearts with the chicken next time, but it was still delicious.

Awesome Slow Cooker Pot Roast
I've made this recipe a few times now with some additions, and it comes out great every time. First, in addition to everything above, I sub out the water for beef broth (no brainer). I also like to chop up a few carrots and stalks of celery, which go right into the pot to cook the whole time. This adds some extra flavor to the broth, and they're super tender when it comes time to eat. I strain the juices into a pot at the end to get out some of the fat, and add some flour to them before boiling on the stove for a bit. After a touch of salt and pepper to taste, it makes a nice, thick gravy that we all enjoy. From there, I always whip up some mashed potatoes and serve with a loaf of bread. This recipe always goes over well with my house.

Pork Marsala
Fantastic recipe! I upped the dosage and cooked a big batch for our house, and substituted in a somewhat fruity Paisano wine since I didn't have any Marsala. Came out delicious, but the portions can be a little small, so we added some asparagus and a raspberry vinaigrette salad onto the side, plus a loaf of bread, and it really came out fantastic. Definitely looking forward to making this one again, everyone cleaned their plates in seconds!
