Cucumber Sandwiches II

Reviewed: Dec. 30, 2004
This is a great recipe. I have found that these are even better when made the day before. Gives the flavors time to blend.

Braised Balsamic Chicken

Reviewed: Nov. 19, 2004
My husband and I were not fans of this recipe. The Balsamic taste was way too strong for us. Just personal taste I think - it was still fun to try a new dish!

Mexican Bean Burgers

Reviewed: Nov. 12, 2004
These were not bad. I do think I made the burgers too thick - they stuck to the pan before they were done in the middle. Next time I will add something spicy like jalapenos to the mix, and I will make very thin burgers so that it is easier to cook them completely. This is a great recipe - I think with some practice on my part and a little spice it could easily be 4 or 5 stars.

Sesame Beef

Reviewed: Oct. 1, 2004
I have made this twice with great results. The first time I followed the instructions exactly. It was very good but I thought it needed some veggies. The second time I used chicken (because I had it on hand) and added broccoli. It was even better! I will continue to make the sauce in this recipe and try different meat and veggie combos. Easy recipe to adjust to personal taste.

Chicken Piccata I

Reviewed: Sep. 16, 2004
This was great and I had everything I needed at home! The breading was perfect. Following the advise of other reviewers, I doubled the lemon/wine and added a cup of chicken broth to make extra sauce. This will be a regular meal at our house.

Basil Tomato Pork Chops

Reviewed: Sep. 8, 2004
These were great. Very tender. I cut the recipe in half and reduced cooking time by about 10 minutes. I also used diced tomatoes with garlic instead of whole tomatoes for extra flavor.

Cooking Light magazine's Chicken Parmesan

Reviewed: Aug. 13, 2004
What a wonderful recipe! So simple to make, all items I keep on hand, and great taste. I put my cast iron skillet in the broiler after adding the cheese, so the cheese was a little brown on top - it was perfect.

Baked Soy Lemon Chops

Reviewed: Jul. 8, 2004
These were good. The soy sauce taste was a little too strong for my family but I might try again with less soy sauce.

Beef and Bean Chimichangas

Reviewed: Jul. 8, 2004
This was wonderful! The only change I would make would be to save some sauce to poor on top when serving. Will make again soon.

Bodacious Broccoli Salad

Reviewed: Jun. 27, 2004
I served this salad to company and it was a hit. I didn't use all of the cheese - just added it until it looked like enough in the bowl. Making the salad 24 hours ahead of time gave it a great flavor.

Chicken Scarpariello

Great flavor. I reduced the wine mixture longer than recommended and added a small amount of flour and water to thicken. Served with rice.

Oven Roasted Potatoes

Reviewed: Jun. 11, 2004
This method of cooking potatos turned out great! I have to admit that I didn't follow the directions as far as the spices I added. (I took another reviewer's advice and used a package of onion soup mix because I was in a hurry) I will try this again and follow the exact recipe since they were such a hit with both my husband and I.

Make Ahead Lunch Wraps

Reviewed: Jun. 9, 2004
Very good idea - I bring them to work for lunch. Much better than my typical frozen dinner. Recipe makes SOOOOOOOO many. Next time I will add spicy salsa instead of the tomatoes or add peppers for some heat.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

Reviewed: Jun. 9, 2004
I loved this! I give it 4 stars instead of 5 only because my husband wasn't a fan. He didn't like the texture of the beans - just a personal preferance. I will make it again for myself!

Barbeque Chicken

Reviewed: Jun. 9, 2004
I thought this was a tasty recipe. A little too much lemon for my taste but I will make it again and reduce the lemon juice. The oregano really gave it a great taste.
