Good Old Fashioned Pancakes

Good pancakes, overall, though not extraordinary. I added pineapple to these and used whole wheat flour, so I did not expect light and fluffy pancakes. I was cooking on an unfamiliar stove in an unfamiliar place, so the first one I made was a disaster and the next three were burnt. However, I found the trick on the last one: cook these over LOW heat and don't cook more than 1/4 cup at once if you want golden cakes.

Easiest Brownies Ever

Very interesting brownie...the batter was very stiff, which was odd, and I found I had to increase the baking time (like in everything I bake where I live). The end result however, was...different. It was rock solid when you tried to cut it, but as soon as you took a bite, it melted in your mouth-delicious! It was not your typical chewy, soft brownie, but it was very good nonetheless.

Blueberry Cheese Danish

So good! This will be gone soon! I reduced the sugar in the dough to 1/4 cup, the sugar in the filling to 1 tbsp, and the sugar in the glaze to 1/4 cup (which made a perfect glaze with 2 tsp of lemon juice) as I do not like overly sweet pastries, and I increased the amount of blueberries to 3/2 cups. I also substituted whole wheat pastry flour for all of the white flour. I found that I needed to double the baking time, but that's normal at the altitude where I live. In addition, I divided the danish into 12 slices, but, again, that's just my preference. Overall a beautiful and tasty danish!

Grandma Johnson's Scones

Great recipe! It definitely makes twice as many scones as it says, though. I used white whole wheat flour and beat the egg with vanilla and got lovely, delicate scones-the whole family thought they were delicious. I've made them twice in two weeks and will definitely be making them again (maybe a variation...pumpkin sounds good.)
