Vegan Chocolate Cake

Very delicious! I've made them several times and people were shocked they were vegan. For frosting I melt vegan chocolate chips with a little coconut oil, add a little rice milk and beat in powder sugar and together they are my favorite chocolate cupcakes.

Cinnamon-Roasted Almonds

We couldn't stop eating these almonds! I used half brown sugar, like others suggested, and added a bit more sugar than called for. Delicious!

Butter Cookies II

These cookies are FANTASTIC!!!! They taste just like the Danish Butter Cookies that come in the tins at the store. The key is to really beat the butter and sugar, then the egg and vanilla until it looks fluffy.

B.L.T. Salad with Basil Mayo Dressing

This is a delicious salad. I made a few changes. I added avocado, used a regular tomato cut in thin slices and quartered. I also used turkey bacon and did not use the drippings in the dressing. You don't need very much dressing so I used about 1/2 the may and upped the basil a bit. Thanks for a great recipe!!!
