About this Cook
I am a single mother of two sons, one just graduated from NCState and my youngest is Sr at UNC-Charlotte. Have to talk about my kids first. I live with two Yorkies who make the rules of the house. I have always loved cooking and especially baking. When married, we never bought bread; I made my own and had a perfect loaf bread slicer. The kids were like kids and stayed around for the licking of the batter. I grew up arm to arm when my mom cooked and I must say I have learned a lot from her. She did the same with her mother-in-law. She said my grandmother taught her how to cook. And I followed tradition and my oldest son was my arm to arm and loves trying new recipes. One of my hobbies is collecting cookbooks no matter where I go. I have quite a collection beginning with the first edition of Betty Crocker's cookbook from my grandmother. She had written recipes in it in her handwriting and she had grocery lists of what she needed. She must have baked 15-20 different type of cookies at Chr
My favorite things to cook
I love baking bread as I mentioned and I love baking anything with any type of berries from breakfast casseroles to rolled up rolls, slit diagonally filling with berries and cream cheese. I also use a lot of cinnamon and nutmeg. However, I do like trying different recipes for dinner or for a covered luncheon. I enjoy doing Mexican food...I enjoy casseroles that are a meal completely one of which was a spaghetti casserole I got from my manager years back but it is still a winner. Same with a broccoli casserole.
My favorite family cooking traditions
Cooking traditions-I made lots of cookies at Christmas;2 of my grandmother's cake recipes.My dad and I had a favorite.And aways a cheesecake niece/nephew's fav.They swore I bought at Cheesecake Factory.My oldest son was cabinet high and younger one in chair sprinkling the sugar cookies.I cooked lots on Christmas Eve.Of course always a spiral ham with my homemade rolls. We nibbled a little before Christmas Eve service.We had to stop by Lowe's Foods as my oldest started a tradition when he was 5 and it was-"are we not going to have balloons for Jesus' birthday; we always get balloons on our birthday." Lowe's Foods was trying to close and balloon making was closed.My ex explained;the people started pulling down the Lowe's green balloons at the counters :).We got home, first we had to stand out on the lawn and sing Happy Birthday to Jesus and send the balloons up to heaven. This was a lifetime tradition.We then had dinner.It was getting close to bedtime for the boys.My ex-husband in his c
My cooking triumphs
My very first cheesecake and using Splenda for my mom and sister. It was perfect; so proud. Another was one of the cakes, mine and dad's, the recipe from my grandmother, what some would call an Old-fashioned carrot cake, but soooo good and I 1.5 the recipe and it was perfect, beautiful rise. These are two of my best.
My cooking tragedies
A deep chocolate fudge cake that goes above the largest pound cake pan I have. It would bake as if it was going to perfect, but when reverted it to the cake plate, it fell into large pieces completely. I tried it one more time and it did the same thing. No more fudge cake. :)
