Peachy Bread Pudding with Caramel Sauce

I made this exactly like the recipe stated, which is unusual for me--I usually make changes to recipes. This one turned out WAY to greasy; there is too much butter in both parts of the recipe (the caramel and the bread pudding). We only ate small piece each. In addition, there really was not as much flavor as I had hoped for. I love the peaches and I think the sweetened condensed mild is good, but it really needs more spices besides the cinnamon. I also think that I'd separate the eggs, add the yolks into the batter, and then whip the whites and fold them in. I also might let the egg/peach mixture sit on the bread a little before cooking to really let it soak in. I'm thinking I might be able to use the bread pudding for some sort of "French toast" make over of the bread pudding part--pan frying it might get some of the grease out--although I'm not sure what to do with the caramel yet. It just might get thrown out. Sigh... If I did this again, I'd lower the amount of butter in both recipes and probably add

Big Soft Ginger Cookies

My family couldn't get enough of them. I've been asked by my nephews to send them more in a care package at their schools. I liked putting red and green sugar on top for the Christmas season.

Sam's Famous Carrot Cake

My brother-in-law wanted me to find him the best carrot cake out there. I thought I had it with a carrot cake with chinese 5 spice. But we tried this as an alternative and WOW. Not only is it a good carrot cake, it's a good cake for those of us who are not rabid carrot cake fans. I, of course, changed it a little. I'm afraid I always do that. I changed the white sugar for 1 cup white and 1/2 cup brown sugar. I left out the coconut as we're not great coconut fans. And I used diced dates instead of raisins (like them better). I also added a little lemon zest as someone else did. Then I added lemon zest, lemon juice, and a little almond extract to the cream cheese icing--absolutely wonderful. Thanks for sharing Sam's cake!
