Baking Powder Biscuits I

Reviewed: Sep. 26, 2011
I used margarine instead of shortening and put the dough in a muffin tin to bake. Yum!

Easy Pizza Sauce II

Reviewed: Sep. 21, 2011
I usually make pizza sauce with tomato paste, so this was an interesting experiment. I used a 15 oz. can of sauce because that was all that I had on hand so I doubled the amounts of the spices. I also threw in 1/2 tsp. of white sugar and 1 tsp. of onion powder... end result was very yummy!

Best Marinara Sauce Yet

Reviewed: Aug. 28, 2011
Great sauce. I used tomato sauce instead of stewed tomatoes (that's what I had on hand) and dried parsley instead of fresh. I had my reservations about using the wine, but I'm glad that I did.

Plain Cake Doughnuts

Reviewed: Jul. 23, 2011
Dough came out so sticky that I ended up adding another 1/2 c. of flour to the mix in order to be able to roll anything out. Final product was very dense, and ended up in the trash. I did like the cinnamon/nutmeg flavor combo., but not enough to make this recipe again.

Very good. Just needed to add some ginger to finish it to our tastes.

Baked Garlic Parmesan Chicken

Reviewed: Jul. 10, 2011
Simple but delicious. I really liked the result of using olive oil to coat the chicken rather than egg. I will definitely make this recipe again.

Apple Crisp III

Reviewed: Jun. 1, 2011
Yum!! I used 4 apples, rather than 4 cups of sliced apples and there was plenty for my husband and I. I also doubled the cinnamon to 2 tsp. and added some fresh cracked black pepper to bring out the flavors. The leftovers are in the refrigerator and I already can't wait to have them for breakfast in the morning.

Amaretto Cake

Reviewed: May 31, 2011
Easy recipe and great flavor. I made cupcakes instead of a bundt cake and they came out very moist. The glaze recipe as written, however, is not really made for applying to cupcakes. Even with holes in the cupcakes, most of the glaze ran off the tops and into the pans. As a result, I had soggy and sticky cupcake wrappers. Great tasting, but definitely messy!

Baked Teriyaki Chicken

Reviewed: May 28, 2011
I used boneless chicken breasts and apple cider vinegar as that is what I had on hand. I think the apple cider vinegar gave the sauce a flavor that would be great with pork but it was only okay with chicken. The recipe is relatively easy to follow and so I will be using it in the future.

Quick and Easy Pizza Crust

Reviewed: May 4, 2011
I used AP flour as that is all I had on hand. This dough really came together easily and was not a sticky mess getting it into the pan.

Spanish Rice II

Reviewed: Apr. 24, 2011
Yum! I used chicken broth like others had suggested. I also didn't drain the can of diced tomatoes and chilies before adding to the pan so that the juice would add more flavor.

Self-Filled Cupcakes I

Reviewed: Apr. 23, 2011
Overall, this is a very good recipe for those who don't want to do this kind of cupcake by making a cake batter from scratch. For my 1st time, I used BC milk chocolate cake mix with 1 tsp. of Godiva liqueur thrown in for good measure. Instead of choc. chips I used some crushed Heath bars. Definitely use more than 1 tsp. of the cream cheese mix in these cupcakes... I followed the directions and now I regret that decision because I have leftover cream cheese mix in the refrigerator and 24 cupcakes that could use some more of the real good stuff in them. I followed some other posters' advice and mixed the cream cheese, sugar and egg inside a quart-size plastic bag. Super easy to just clip a corner off and use it to pipe the mix into the pans. No muss, no fuss!

Mrs Espy's Enchilada Sauce

Reviewed: Apr. 17, 2011
I also followed the suggested subs for this recipe: chicken broth instead of water, and add 1 can (8 oz) of tomato sauce. I also added some onion powder, oregano, and 1 tsp. of sugar to the mix based on my personal taste. Definitely will use again.

Best Chocolate Chip Cookies

Reviewed: Apr. 12, 2011
I used 1.5 c. of brown / 0.5 c. white sugar and I also didn't dissolve the baking soda. I used non-stick cookie sheets and most of these cookies stuck to the pans. Overall, this recipe makes good CCC's, but not the "best."

Taco Seasoning I

Reviewed: Apr. 12, 2011
Awesome flavor. I used 1 TBSP for 1 lb. of lean ground steak and you could taste the spices without feeling like your mouth was on fire. My husband and I will probably use more than 1 TBSP of this spice mix at a time as we like a little more heat than what we experienced the 1st time. Thanks for sharing this recipe!!

Easy Pizza Sauce I

Reviewed: Apr. 9, 2011
I prepared this recipe exactly as directed. I felt the final product was too bitter and bland for my taste so I added approx. 1 tsp. of granulated sugar and 1 tsp. of onion powder. With these changes, I would definitely make this again. This recipe definitely makes enough sauce for several pizzas. I ended up putting 2/3 of a single batch in the freezer for the next couple of times that I make pizza for dinner (there's only 2 of us).

Master Pizza Dough

Reviewed: Apr. 9, 2011
Prepared as directed and the dough was still rather sticky. I didn't want to add too much extra flour so I used extra cooking spray on my hands to spread the dough out in the pan. Final product was very good. I will make this recipe again.

French Butter Cakes (Madeleines)

Reviewed: Mar. 29, 2011
Well, I just finished eating some of my 1st attempt at this recipe. For the record, I used 1 tsp. of vanilla and only 1/2 tbsp. of lemon zest. Next time I will definitely use more zest or add lemon extract as the flavor is too faint for my taste buds. I got 18 madeleines out of this recipe. Something to consider for those of you who don't have more than one pan available. The cakes were ready after 12 minutes in my convection oven and the texture was light and spongy. I will definitely be trying this recipe again, but with more zest or extract for flavor.

Lemon Cranberry Muffins

Reviewed: Mar. 1, 2011
These didn't taste anything special to me. Maybe because I substituted blueberry craisins for fresh cranberries? I don't think that I will make this again.
