Chicken Broth in a Slow Cooker

Preety good recipe.....i just hate to waste the whole chicken pieces. I use a leftover Rottissere chicken carcass. We have already used the breasts for salad, and the drumsticks and thighs for dinner. We also vary from the original recipe by adding in 1 or 2 parsnips......for the sweetness that they add to the broth. My wife and i also use poultry seasoning instead of the basil it more flavor..... Be careful about what type of Rottissere chicken that you use...some are barbecued or have garlic or lemon flavorings.....these flavor will show up in the shock.

Mom's Italian Beef Barley Soup

This was an extremely bland and boring soup, I used beef stock, instead of water and bullion . Added cooked barley at end....used carrots, celery, parsnip, onions and garlic. Also added can of chopped tomatoes with basil.

Chicken Soup

Kinda boring as is...the 2nd time I used chicken thighs, onions, carrots, parsnip, garlic, celery, chicken seasoning and didn't have to use a chicken flavor base. Doesn't take a lot to make good chicken soup.

Hasselback Potatoes

Good chopsticks on either side of the potatoes. These will act as a guide so that you don't slice all the way through. If potatoe is not relatively flat on one side, cut it so that it is. This is the side that goes down on cutting board when slicing . I have used Asiago when I didn't have Romano. I usually add extra butter, cheese and Italuan flavored bread crumbs. I have made them as directed and also on a weber grill on the upper rack in a aluminum pan. Excellent for fancy dinner or with Steak on the grill....a keeper

Good recipe, but it would be more like an Italian commercial product and better if you use Everclear or any other grain alcohol (95% alcohol) vs 40% for Vodka. 5 cups water to 3 cups sugar is not as sweet and I think a better ratio.

Chef John's Sausage & Shrimp Jambalaya

The portions are relatively small...keep that in mind when deciding on the # of portions. I doubled the amount of tomatoes and it was just right... This is now my favorite Jambalaya time I am adding chicken in place of or in addition to shrimp....
