Mom's Smoked Salmon Fried Rice

I really enjoyed this recipe. You can tailor it to your own personal tastes and whatever is in the fridge. Here are my changes: I didn't have green peas or green onions, so I used about 2 cups of green beans, a handful of brown mushrooms, and half a jalapeno. I thought 3 cups of rice was too much, so I made 2 cups instead and boiled my rice with chicken broth. Also, I used 2 day old rice so it would fry better. I doubled the egg and salmon, using 4 eggs and 8 ounces of salmon. All in all it was very yummy and a great way to use up leftover ingredients.

Shrimp and Asparagus

Such an amazing recipe! However, it calls for A LOT of fat and A LOT of sodium. Recipe tastes just as good cutting out the butter completely, replacing the cream with fat free milk, using light alfredo sauce, and cutting down on the cheese.

Quinoa and Black Beans

This recipe is really good! I used only 1 can of black beans, 1 can of corn, about half of a large red onion, and a very small amount of cilantro. I also added some fresh tomato, bell pepper, avocado, and paprika. Very high in vitamins and low in fat. Not only was this dish tasty, but it was a sight to see with all of the beautiful colors. Definitely will make this again!

Peppered Shrimp Alfredo

There's a lot of fat in this recipe and I cut it down by not adding the butter, using 10 ounces of light Alfredo sauce, and fat free half and half instead of cream. Very delicious!

Mom's Stovetop Pork Ribs

This is a great recipe, very easy with a lot of flavor. However, it makes MUCH longer than 25 mins for the water to evaporate. My ribs cooked well over 1.5 hours. Next time I'm going to add less water.

Pumpkin Ginger Cupcakes

These cupcakes blew my mind!!! They were so good I ate six of them in one day! I gave some of them to my friends and they all loved them too. These cupcake were probably one of the best I've ever had. As recommended by another reviewer, I used the cream cheese frosting 2 recipe to make the frosting, and the frosting went perfectly with the cupcakes. I couldn't find crystallized ginger, so instead I used candied ginger snacks. It was a wonderful replacement because there were bits of candy ginger in the cupcakes.

Mediterranean Greek Salad

I made this salad exactly as listed, except I used white onion instead of red onion because I didn't have any red onion. I thought the salad was bland and nothing and special. The recipe titled Tomato, Basil, and Feta Salad has similar ingredients, but is far more flavorful and delicious.

Sweet Potato Potato Salad

Absolutely amazing! My boyfriend and I inhaled these potatoes! I had a 1:1 of sweet potato to regular potato because I love me some sweet potatoes :)

Corned Beef Hash

Soooo good yet so easy! Impossible to go wrong with this recipe. I use about half the amount of onion and potato unpeeled. I also add black pepper and garlic.

Quick Berry Milkshake

This is sooo yummy! I tweaked the recipe a bit to make it more healthy. I used half milk half vanilla yogurt, which made the smoothie more thick and eliminated the need for vanilla extract. I also added a very ripe banana, which made the smoothie very sweet so I didn't need any sugar.

Vegan Bean Taco Filling

So yummy! I didn't have any cayenne pepper or yellow cornmeal, but it was still delicious. I added some jalapenos because I love it spicy. Next time I'm going to add more salsa because it was a little dry.
