Simple Roasted Butternut Squash

Nice way to make this squash. Good flavor, sort of like rich, slightly sweet roasted potatoes. Cooking time was longer than indicated by about 10 minutes (I have gas convection). Smells heavenly while baking.

Joe's Turkey Brine

Recipe was fine, everyone liked the turkey. Not a huge flavor boost but turkey was tender. I will say brining is a pain unless you have a small turkey. I stuffed the turkey with apple, onion and a cinnamon stick. I also roasted it in a bag and it was very moist.

Pico De Gallo de Alicia

I quadrupled the recipe and it turned out fine. I am not giving it 5 stars for several reasons: I find that salsa recipes stating quantities of tomatoes and onions are inaccurate as tomato sizes vary largely. I replaced "2 tomatoes" to be "two CUPS of tomatoes" and likewise for the onion. The 2:1 ratio for tomatoes and onion in Pico seems to work really well. I did the same with the cilantro, converting the sprigs into tablespoons. After it was all said and done, I added sugar to mine (would be 1.5 teaspoons for the original recipe) as this always seems to just finish off a good pico for us. Kudos on NO VINEGAR as I feel vinegar ruins pico. The lime juice quantity was a bit more than other recipes I have used and we were pleasantly surprised at the wonderful difference it made.

Asian Coconut Rice

Slow-Cooker Chicken Tortilla Soup

Everyone loved it but it needed salt and something else I cannot quite place. Possibly more cumin. I added the raw chicken whole and let it cook all day, then removed it and shredded it. It basically fell apart. We did not do the actual tortilla part, just ate the soup with a side of homemade pico and chips!

Sesame Beef

I doubled the marinade as others recommended. The beef needs to be drained after cooking before adding the sesame seeds. The beef made a lot of liquid when cooked but I used flank steak instead. I also added baby corn, pineapple and julienned peppers to make this a more rounded meal by itself. Everyone loved it!

Delicate Jasmine Rice

This was very bland. Without the cilantro, it would have been too bland for my taste. The cilantro added just enough zing to make it palatable. It went OK as a bedding for the sesame beef I made.

Panna Cotta

Awesome recipe. The texture was fantastic and it set up really well! I halved the sugar because I wanted a very light dessert and topped it with rum sauce. I will be making this again! It tasted somewhat like tapioca :)

Rum Sauce

This has excellent texture (be sure you cook as long as specified). I used 1 tsp. rum extract in place of the actual rum because I don't keep rum in the house. It was a bit too sweet and the color was very pale. Next time I will half the sugar and use brown sugar instead.

Salmon with Dill

Used olive oil in place of butter and sealed it in aluminum. Baking time was right on for me. Kids loved it, just add a splash of lemon juice and it is great! Will definitely make again!

Chicken In Coconut Sauce

I followed this recipe exactly on every count. The sauce never thickened and the onions cooked into nothing by the time the chicken was cooked through. It was too sweet for me and lacking in spice flavor. I would have to alter this to make a thicker sauce and add more of the spices for my taste. Not sure if I will make this again.

Gingerbread Pancakes

Flavor was OK but not something I would call gingerbread, more like spice cake. It was definitely more like muffin mix than pancake batter, was WAY too thick. Too sweet, too cakey.
