Excellent and Healthy Cornbread

Excellent!! Hubby said this was the best cornbread he's ever had. (Sure can't let him mom heat that!!) Even my step-son loved it. I thought it was amazing ... and I'm NOT a cornbread fan! Highly recommended!

Guacamole

Made this for my husband and he loved it! I don"t like avocado, but he told me I had to try it. I did ... and ended up eating half of it!! We polished the whole thing off in less than 30 minutes! lol. For me to eat ANYTHING with avocado in it is a pure, unadulterated miracle! ha ha. Excellent! I totally recommend this recipe. =D

Spaghetti Squash Primavera

This was excellent! From reading the other reviews, it seems quite versatile as well. I used a rather large spaghetti squash so it took 17 minutes in the microwave, but it came out perfectly. I substituted red bell pepper for the green, used a whole small onion, one zucchini and 2 cloves of garlic. I mixed the garlic with the onion and cooked them together on low for about five minutes while I cut up the bell pepper and zucchini. I then added those to the pan and let that cook while I chopped 3 Roma tomatoes. Threw those in, added the seasonings plus fresh basil. Also added red pepper flakes and Tony Chachere's Original Cajun seasoning. Left out the cheese but added about 1/2 cup of tomato sauce that I had in the fridge. OMG, it was DELICIOUS! I couldn't stop eating it. Hubby and son loved it too. Great recipe!

Crustless Cheese Quiche

Excellent! Someone said you ca'tn mess up with this recipe. It's TRUE!! I made it with ALMOND MILK because I can't do cow's milk. I used Colby Jack cheese and Gouda because that was all I had on hand. Taking someone else's suggestion, I sauteed green pepper, onions, garlic, sun-dried tomatoes and spinach. Also added bacon. I was really worried about how the flavor of almond milk would affect the quiche. No problem Came out great! Will be making this again, but I think I'll try goat's milk next time. =) Bon Appetit!

Pesto Chicken

My husband said this was fantastic! I made pesto with fresh basil from my garden. I wasn't sure how to prepare the chicken, so I tried it two ways. First I pounded the chicken, then spread the pesto on the breast, then rolled the chicken and wrapped the bacon around it (picture added). The smaller pieces that I cut off the breasts, I also pounded, spread the pesto on, but the wrapped the bacon around the chicken as it lay flat with the pesto side up (picture added, but you can't see the chicken under the pesto). Since the chicken was not as thick on the smaller pieces, my husband said they were more flavorful. They cooked in 25 minutes as well. The full breasts took closer to 45 minutes.

White Chocolate Covered Pretzels

I made these last year. I crushed up candy canes in my food processor and added them to the melted white chocolate bark. Then I formed the pretzels into the shape of a wreath and drizzled the white chocolate/candy cane mixture over the pretzels. I sprinkled some red and green sugar over them, put them on a decorative plate, added a red bow to the "wreath" then wrapped it in celophane. They were very tasty gifts and a big hit!

Chili Seasoning Mix II

My husband LOVED this seasoning and said from now on we should make this rather than buy the prepackaged stuff. The only change we made is we added two cloves of fresh garlic to our chili since we didn't have any dried minced garlic which we omitted from the seasoning mix.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

My husband said this is now his favorite meal. It looked/smelled so good, I even tasted it (and I prefer a raw vegan diet). It was delicious for cooked food! =) Since I did not have bacon in the house, I omitted that and instead of bleu cheese, I substituted half goat cheese/half feta, which is what I had on hand. Keep using up those leftovers Judy! This one is a winner! Thanks for posting this. YUMMMM!!!

BLT Chicken Salad

My kids rated this "a keeper" many years ago and requested it often when they were still home. Now my stepkids love it and whenever I make it, there are NO leftovers. Easy to make and very tasty. I follow the recipe and it's a hit! Dressing is awesome too! Highly recommended.

Lemon-Pepper Salmon II

So easy and delicious. My only substitution was Mrs. Dash instead of lemon pepper. I'm sure it is just as good with lemon pepper, but hubby has to watch his sodium intake and with the soy sauce, I tried to reduce the sodium as much as possible. SO good ... SO moist ... SO flavorful! Simply outstanding.

Simply scrumptious ... and easy. I followed the recipe as written. Didn't have flaked coconut, but I did have shredded organic coconut so I used that. It was delicious. I'll be making it again, for sure.

Italian Green Bean Chicken

Dang, that was GOOD!! Taking the advice of others, I sauted the fresh green beans in the six cloves of garlic and 3 TBSP of olive oil. I removed the green beans and added the chicken after pounding it some. I aprinkled the chicken with oregano, basil, parsley and garlic salt and let it simmer. I didn't have diced tomatoes but I did have diced tomatoes with green chilis so I added a can along with the green beans back into the pan and continued to let it simmer. Meanwhile, I had diced up and boiled red potatoes, and when they were done, I drained them and added 1/2 stick of butter, salt and pepper, parlsey and parmesan cheese. This dish came out great and everyone loved it. It was quick and very tasty. Will definitely make it again. =P

Roasted Asparagus and Mushrooms

The recipe doesn't say what to do with the mushrooms so I just threw them in with the asparagus. It was delicious; however, instead of using rosemary, I substitutd garlic salt. Everyone loved it and it was SOOOOO simple. I've made this several times now.

Chicken Breasts with Balsamic Vinegar and Garlic

This was very good. The only variation I made: I also didn't dredge the chicken in flour, instead I added a TBS of flour to 1/4 cup of water, shook it up and then added that to the gravy and it thickened up perfectly. Also, I marinated the chicken for about 1/2 hour in Balsamic Vinegar. Came out great and I will make this again.

Oven Roasted Red Potatoes and Asparagus

I'm sorry I didn't read the reviews first as I usually do. I totally agree that the amount of rosemary and thyme is overkill. 1/4 - 1/2 tsp at the most would be appropriate. Also, my asparagus was overcooked by the time the potatoes were done, so as others have mentioned, definitely cook potatoes 30 mins and THEN add the asparagus. I too had to throw mine out. Husband said it felt like we were eating a sprinkling of potatoes on spices. I will try this recipe again but with the changes.

Honey Lime Tilapia

Excellent. The only changes I made were to replace the butternut squash (which was not available) with yellow squash, and the poultry seasoning with lemon garlic seasoning. I do agree that the tilapia needs to marinate a lot longer than 1 hour to retain the flavor. . It was a big hit! Everyone loved it. Highly recommended.

Feta and Sun-Dried Tomato Stuffed Chicken

Another Outstanding recipe! This one got RAVE reviews from my husband and step-son. They couldn't stop raving about it. It's definitely a keeper. I didn't have "Greek Seasoning" so I searched out a recipe and made my own. I accompanied with chicken with asparagus that I drizzled with olive oil, dry white wine, garlic salt and black pepper and roasted them, and long grain wild rice. Scrumptious! HIGHLY recommended. You won't be sorry.

Spinach Stuffed Chicken Breast

Oh yeah, this was a HUGE HIT! Didn't have sour cream so I nervously substituted cottage cheese and instead of pepper jack, only had colbyjack on hand. Other than those two substitutions, followed the recipe as it is written. According to my husband, it was outstanding! He RAVED about it and it even earned me a massage! :D Yeah, I'll be making this again!! LOL!
