Red Pepper Soup

Much like others I roasted the red peppers and added a touch of salt. I also used Soya Silk instead of the heavy cream to make it a little more calorie friendly. The consistency might be a bit runnier but the taste is awesome. Great easy soup to make.

Apple Crisp II

This is an awesome recipe, so good. I cut down on the white sugar with the apples, forgot the flour and it still turned out great. The water seemed to help make a carmel syrup that was so nice. Used spy apples that held their shape. The topping is very nice.

Yummy Sweet Potato Casserole

This is so good! I substituted a brown sugar substitute to make it a little healthier and it turned out awesome! The topping is so good, like eating candy. I baked the sweet potatoes in the over with skins on, found this easier than peeling and boiling the goodness out of them. The mixture seemed a little runny when I first put it in the pan but it was great when finished. Going to make it again, know it will be a hit at dinners!

Creamy Potato and Leek Soup

Great, simple recipe. Like many of the others I made a few minor changes, I added some celery, salt, fresh ground pepper, fresh minced garlic and I used soya silk instead of heavy cream. It turned out great. I did wonder though if you added a bit of bacon when sauteing the leeks if that would also give it some nice flavour.

Spinach and Sun-Dried Tomato Pasta

This pasta turned out great! I didn't have vegetable stock so used chicken stock and it tastes great. I wish I had made some chicken though to toss with it. The peppers give it a real bite, if you like hot!
