Amazing Pecan Coffee Cake

Delicious, rich, moist. Baked it one hour in a bundt pan. Put all the topping in the middle after adding 1/2 batter. This didn't work as the cake separated in two parts when I took it out of the pan. Make sure to line with foil and let it sit 10 minutes after taking it out of the oven.

Roast Sticky Chicken-Rotisserie Style

Made this for a family gathering. It was fabulous. It seemed as if it might be done at 4 hours, but I kept it in for the duration. Basted quite a bit during the last hour. Also realized that I put the chickens in UPSIDE DOWN!! I wonder if that's what made them so deliciously moist. Took the pan out, covered it and had it sit out 1/2 hour as guests were late. Still wonderful and hot. Gravy was fantastic!

Italian Wedding Soup I

This was wonderful at my soup party last night. I doubled the recipe, baked the meatballs ahead of time using only one egg. I also cooked the orzo separate. I added some dried onions, parsley and italian seasoning as the soup cooked.

Chicken a la King I

This was fabulous. I did have to wait quite a while before it thickened. I wasn't prepared for that. I made Alton Brown biscuits to go along with it. We had this combination from our Catholic grade school lunch kitchen. Those lunch ladies made these remarkable homemade meals. Chicken on biscuits was one of them. This was a more adult version, but this adult palate loved it. All my siblings stopped over throughout the evening after I told them what I was making. We all remember this dish fondly. Thanks for sharing it.

False Cabbage Rolls

Such memories this brought back. I don't know if it was that memory or the taste that made me love this recipe. I did the recipe as stated except I found that garlic salt was much better than salt. I also put white rice in the bowl before the mixture for serving. I think you could just add it to the pot.. cooked rice, that is..

Ice Pops

These were smashing! I bought some ice pop molds from IKEA which are hard to remove the pop from. I'll go back to my mom's dixie cup/stick method.

Home-Style Vegetable Beef Soup

For the amount of effort, this was fabulous. I didn't worry about cooking things ahead since everything softened during the simmering. I brought things to a boil after loading the pot, then turned down to a simmer. I used fresh green beans and frozen corn. I also used white potatoes which worked fine. Red are firmer over time, but this didn't last long. Could add some canned tomatoes next time perhaps.

Seven Layer Taco Dip

This was excellent. We shared it for a large Thanksgiving party, and I received calls the next day asking for the recipe. I added red peppers which added a wonderful sweetness. I did cut back on the salsa, nixed the black olives and used 1/2 bagged shredded lettuce. It was rather tall on the platter, but with the Scoops as chips, it was perfect. My sister-in-law using the guacamole dip found in near the sour cream instead of using the cream cheese/sour cream.

Richard's Chicken Breasts

Very good. I cut the recipe in half and used shredded mozzarella instead of slices. That way I could use less. Did not have much with which to baste. Chicken was very plumb and tender.
