Cheesecake Brownies

Reviewed: Jul. 18, 2015
Not much to add to what's already been written. Nice, quick easy dessert to dress up a boring box of brownies (which I always have on hand for a chocolate fix). I think the brownies would taste more like cheesecake if I'd chilled them before serving.

Patti's Mussels a la Mariniere

Reviewed: Mar. 25, 2012
We used clams instead of muscles as my family doesn't like muscles as much. Recipe was still excellent and one of my husband's favorite meals that I've pulled off the website.

Sweet and Spicy Green Beans

Reviewed: Sep. 29, 2012
My husband isn't a real fan of fresh green beans (which I love). While we were eating this at dinner, he looked at me and said, "this is how to eat green beans!" Loved it and saved it. Would definitely make again.

Moist Chocolate Muffins

Reviewed: Mar. 3, 2015
Based on other reviews, I made this recipe with sour cream instead of yogurt (I only had flavored yogurt on hand, and figured sour cream would be more faithful to the original flavor) and added just a wee bit more milk to thin out the batter. Muffins were moist and delicious! I'm not sure what size muffin tins the original chef is using, but my batch made 19(!) regular size muffins.

Spicy Black Bean Cakes

Reviewed: Apr. 17, 2015
My husband is a serious carnivore and was hesitant to try this recipe, especially since he's not a real fan of sweet potato, but he gobbled them up and even my picky two year old ate a patty and a half. Per some of the other reviews, I did nuke the sweet potato shreds in the microwave for a minute just to help them along (I don't see why you couldn't throw them in the pan with the other vegetables and achieve the same thing if you wanted to avoid an additional step). I also used two eggs since the complaint tends to be that the cakes are a little on the dry side. When mixing, I dumped the beans into my Kitchenaid mixer first and used the paddle to mash the beans (because I'm lazy), then added all of the other ingredients, as written. The sauce was very good. I think next time I will try to add a few more spices to the patty; without the sauce, I think the patty could be a little bland.
