Crisp Oatmeal Cookies

This is an elegant cookie. It is European in style. I took the advice of other reviewers and used butter rather than shortening (more cholesterol, but no trans-fats). I used the cocoanut but not the chocolate chips. They are very crisp and buttery....very nice with a cup of espresso!

Bar-B-Q Baked Beans

These are a wonderful alternative to the usual baked beans. I use Thai chili sauce and cut it to six ounces. Mine are quit spicey and my guests love them. I also dice the bacon, but I don't fry it first as some do. Be sure to drain the beans completely, or they will be too moist.

Strawberry Pie II

This pie is wonderful and so easy to make. I add a bit more corn starch for added texture. Not only is the flavor wonderful, but it is "eye candy" as well.

Baked Oatmeal I

This is a terrific breakfast treat! I eliminate the brown sugar and use only the cinnamon for topping. Otherwise it is too sweet for me. I also use regular oats and the result is a nicer texture.

Buttermilk Coconut Bars

This recipe was easy and fun to prepare. It came out of the oven looking wonderful. I was very disappointed in the taste. You can taste neither the buttermilk nor the coconut. The primary flavor in cinnamon. If I'm going to eat this many calories, I want it to have a terrific taste.
