Balsamic Goat Cheese Stuffed Chicken Breasts

Impressive for company. VERY tasty. I think thighs work better than breasts because you don't have to slice them thinner. I sauted mushrooms & onions separately, then added to the balsamic later, but maybe you wouldn't have to do those separately. I added sundried tomatoes to the cheese. More time intensive prep than indicated

Baked Kale Chips

I did 10 minutes at 300 degrees on a rack, which worked well. I tried 3 different spices: sea salt, onion powder, Spike. You really have to go light on the spices as it can be overwhelming.

Cream Cheese Penguins

So cute!! Since everyone said the tasate was a little bland, so I used cranberrie goat cheese - excellent! The only mistake was buying the cheap jar of roasted peppers cuz the pieces were too small to make a long scarf. I managed, but tricky. I also used the veggie peeler to make strips of carrots that worked well for scarves - easier to handle. For the display I added some pieces from my Christmas village: kids sledding & trees. I put it all on a round white stirofoam and covered half of it with foil cut in a half-circle to look like an ice rink. Igloo was a nice touch too.

Sweet Pork Slow Cooker Chili

OMG! Outstanding! I followed the recipe almost exactly, except used canned tomatoes instead of fresh, didn't have paprika on hand and used chili powder. Loved the sweet aspect, especially the pineapple flavor. This was a HUGE hit during our SeaHawks game.

Asian Lettuce Wraps

Great dish - hit of the party. But I made some changes based on other reviewers comments; Skipped the Tofu, added Sweet Chili Sauce, added waterchestnuts & shredded carrots (good for color & texture), topped each serving with sesame seeds. I made it as an appetizer using endive and no rice. I also served it as a main dish using nappa cabbage instead of lettuce because it holds together better.

Chicken Balsamico

Yummy and easy. The kalamata olives really MAKE this recipe so don't skip those or it might be bland. I added salt and Spike spices and used chicken broth instead of water. I added asperagus in the last 4 minutes.

Pineapple Chicken Delight

Yummy and easy! What could be better than that? I was reluctant to include the potatoes, but they were great. I added baby carroh which I highly recommend. I only had a small can of pineapples, so added a small can of mandarin oranges along with its sauce and that worked well too. Loved the combo of fruit juices with the BBQ sauce!

Pork Steaks

awesome! I mixed teriyaki in with the soy sauce. The sweet and salty combo was great. I also used sweet onions instead of green onions. My only challenge was I used thick pork steaks so the cooking time was much longer.

Yummy Sweet Potato Casserole

This turned out great, but just a little bland. I guess I'm used to "candied" sweet potatoes. I read dozens of reviews and added many things that people suggested like nutmeg, ground cloves, cinnamon, orange peel spice, pumpkin spice, dribble of mapel syrup and doubled the vanilla. I used evaporated milk. Maybe it would be tastier if I had baked the potatoes in their skin instead of boiled them (I started boiling them before I read all the reviews with that recommendation!) Everyone really enjoyed this dish, so it was successful, but next time I might add brown sugar or more syrup.
