Tomato Harvest Marinara Sauce

Great, large batch recipe for the end of summer tomatoes. I did change up the order of operations a little by par boiling the tomatoes for 2 minutes, dipping them in ice water and sliding the skins off (long process for 25 lbs!. Then I halved the tomatoes and threw them into the large cooking pot to simmer and start to break down. I used my immersion blender after about 30 minutes of simmering, to break up leftover chunks. I then took the tomatoes and put them through my food mill to strain the seeds. The strained marinara was then seasoned with the spices etc and the onions. It has been cooking down for about 2 hours and has probably another 3 hours to go before canning. Thanks for a large batch recipe!

Yummy Bok Choy Salad

We really enjoyed this recipe, especially with the substitution of sesame oil for olive oil and rice vinegar for white. Lovely salad

Epicurean Deviled Eggs

I just made these eggs a few minutes ago in order to take to a get-together and enjoyed the filling flavoring quite a bit, but with 1 major change.....no butter. I just substituted full-fat mayo. This was an interesting twist as there is not pickle relish in these eggs and the worstishire sauce adds a little twist.

Country Quiche

I am actually cooking off two of these quiches as we speak. I did change things up a little based on the reviews. I added 4 oz of low fat ricotta cheese, omitted the bacon, added 1 bunch of swiss chard to the first quiche and 1 bunch of kale to the second quiche. For both the chard and the kale, I wilted them down as I was doing the onions. I am really looking forward to having some of this tomorrow morning :)
