Perfect Ten Baked Cod

This is an excellent recipe for baked cod. I squeezed a wedge of lemon over each 1/4 lb. slice of Icelandic Cod, added wine (always a must), and topped each piece with the green onion, parsley, and buttered crumbs before baking.

Shrimp and Pasta Shell Salad

The juice of a whole lemon??? I don't think so. I used 2T of fresh lemon juice, and then added 1T sugar, more mayo, and sour cream to tone down the tart taste of the lemon. I also added chopped sweet onion. Was out of cayenne, so used 5-pepper blend. The recipe calls for 1/3 C. chopped dill. 1/4 C. of chopped fresh dill is more than enough. Depending on preference, add peas, bacon pieces, or even chopped hard boiled egg. Good recipe.

Party Cheese Ball

I made this recipe this afternoon for Christmas Eve tomorrow. Excellent taste! I used green onion as one reviewer suggested, and cut down the Worchestershire sauce to 1T. I used Lawry's Seasoned Salt instead of regular salt. The consistency looks good. I'll chill then roll in finely chopped pecans tomorrow. Delish!

Seafood Pot Pie

I used 1/2 C. half and half instead of milk, with the canned cream of onion soup and the chowder. I used a canned chowder. I did not use imitation crab meat. I added a can of drained lump crab meat, and a can of drained chopped clams, along with the shrimp. Make sure all seafood is drained well. More seasoning is a must. I added 1/2 t. Old Bay Seasoning to the mix, along with the 1/8 t. tabasco.

Maple Salmon

Excellent recipe. I've made this several times as written. Marinate for 30 min. and bake at 400 degrees. Very tasty - nothing else needs to be added to this recipe.

Seared Scallops with Jalapeno Vinaigrette

Excellent! There are many delicious oils and vinegars that are infused with flavor, available at olive oil shops. In the sauce, I used a blood orange infused olive oil. I seared the scallops on high heat using grapeseed oil. Easy, tasty recipe I will make again.

Cauliflower Au Gratin

Fabulous Beef Tenderloin

I've made this great, easy recipe several times. I also used low sodium soy sauce, fresh garlic, and added butter-sauteed mushrooms for the last few minutes of cooking. Very flavorful.

Cauliflower with Dijon Sauce

I was looking for a cauliflower recipe with something other than basic cheese sauce. This was very good. I like Dijon mustard, but I cut the amount in half. I did not microwave, but parboiled the cauliflower, then finished it in a 350 oven with the sauce and cheese.

Blue Cheese Beef Tenderloin

Excellent recipe for whole beef tenderloin. I marinated the beef for a few hours in the refrig. The beef was tender and flavorful and the blue cheese sauce was delicious. I kept the saucepan on the lowest simmer and stirred often to melt the cheese and keep it warm.

Roasted Vegetables

Excellent recipe. I reduced the temp to 450 and gently turned the vegetables every 10 min. The recipe reminds me of autumn - sweet potatoes, butternut squash - pair it up with any meat - very flavorful.

Parmesan Crusted Tilapia Fillets

Good, easy recipe. Any mild flavored fish such as haddock or sole can also be used. Additional seasoning can be added to taste, like garlic salt or fine herbs. I used 4, 4oz. pieces of tilapia, with 1/4 c. of grated parmesan and 1/4 c. of bread crumbs. There was plenty of coating mix. I also reduced the paprika to 1 tablespoon.

Irish Stew

I used Angus beef stew meat (it's just a preferred taste over lamb), but an Irish Stew is traditionally made with lamb. I would suggest adding boullion or stock, rather than just water, for more flavor. Also, I add 1/2 C. of Guinness with the stock and let it simmer on low. Great with a loaf of Irish soda bread.

Squirrel's Great Beef Steak

Very good marinade. I used sliced sirloin steak and grilled it indoors. Delish. For steak seasoning, I added 1T of A-1 Steak Sauce. For seasoned salt, I used 1/4 t. of Lawry's and 1/8 t. of Lawry's seasoned pepper instead of salt and pepper. No extra salt is needed.

Easy Sausage Stuffing

Very good recipe; wanted a simple stuffing recipe to go with turkey mignons on the grill. Use a 12 oz. pkg of stuffing instead of 14 oz., with 2 1/2 C of broth; moist and flavorful.

Caprese on a Stick

This recipe reminds me of an appetizer we had at The Mission Grille in Sister Bay in Door County, WI. Definitely drizzle reduced basalmic vinegar. There are many wonderful flavored basalmic vinegars on the market. Just simmer on low heat and stir until reduced to syrup consistency.
