Chia Coconut Pudding with Coconut Milk

Reviewed: Apr. 27, 2014
I loved this recipe. However, as most of us do, I made some changes. I skipped the cinnamon, salt and strawberries (didn't have strawberries), and substituted one small can (8oz) of crushed pineapple, juice included. Went great with the coconut!

Impossible French Apple Pie

Reviewed: Feb. 13, 2014
Easy to make with pantry items that are usually on hand. I used Gluten Free Bisquick, and skipped the nuts since my husband doesn't like nuts. Added a little extra of each of the ingredients since I decided to make two since I saw most posters indicated it overflowed. Used two 8.5 inch pie plates, which probably is why mine were a little flat, but they still tasted yummy.

Sweet Hot Mustard Chicken Thighs

Reviewed: Jul. 13, 2013
Only change I made was using boneless and skinless thighs. Marinated over night and grilled on the grill! Everyone wanted the recipe. It's a keeper.

Five-Bean Salad

Reviewed: Jul. 8, 2012
This is an excellent cold bean salad. I made two minor changes. Substituted a can of black beans for the wax beans which I didn't have, and cut the sugar to 1/3 of a cup. We live in Pennsylvanis Dutch Country and preferthe dressing less sweet. I read the other reviews and started with a 1/3 cup of sugar, adding "to taste" and ended up using the whole 1/3 cup. But more would have been to sweet.

Spanish Style White Bean and Sausage Soup

Reviewed: Mar. 24, 2012
Spicy and packs a little heat! Made three "slight" changes. Used canned Great Northern beans, 1/2 tsp paprika and canned spinach instead of kale. I cook according to what I have on hand and what I got on sale at the grocery store. Looked up recipe for Andouille sausage, which I got at the grocers for 1.99 lb, and this recipe fit what was essentially in my cupboard and did not disappoint! Try it, you'll love it.
