Easy Corn Pudding

TASTY! This recipe is super easy (and super cheap, which helps when you're a poor college student like myself, haha). I also liked that it only required one dish and one spoon - easy cleanup! However I did follow some of the suggestions from other reviewers: I did not drain the liquid from the whole kernel corn, I decreased the butter to 1/3 cup (5 & 1/3 tbsp), and added two eggs. Additionally, I did not have any sour cream on hand so I substituted plain greek yogurt. Perhaps because of the extra liquid, the pudding require much longer to cook (maybe 15-20 additional minutes). Although, I'm afraid with out the extra liquid from the canned corn the result would have been more like a souffle, and I prefer a moist, dense pudding. With these modifications, I will definitely use this recipe again!

Simple Scones

Not only was this recipe EASY, it produced TASTY scones!! I added more dried cranberries (because I love them) and orange zest than the recipe called for, but the orange flavor was still too subtle for my liking. Next time, I'll add even more zest :) I also made some other minor adjustments: I substituted baking margarine for butter and plain greek yogurt for sour cream; I painted the tops with melted (real) butter and sprinkled with corse raw sugar before baking. The best part of this recipe (other than it being so easy)... the scones are not too sweet, but rather quite perfect! Definitely adding this to my baking arsenal!

OU Corn Casserole

As a college student, this was such a simple and cheap recipe to make! I did add one egg, and might try adding some skim milk next time, as I prefer a creamier dish. I will definitely make this again!

Baked Asparagus with Balsamic Butter Sauce

This super simple and tastes wonderful! I added some thinly sliced red peppers to the asparagus and they worked so well together (similar cooking times, both were tender). I used one tablespoon of soy sauce and two tablespoons of balsamic vinegar. The sauce was really rich, I might decrease the butter down from 2 tablespoons to 1 1/2 or so. As others have said, the sauce would be really good over any protein (red meat, poultry, fish). I served the asparagus and red bell peppers with about 4oz of Mediterranean seasoned tilapia. Honestly, the sauce would work well with any veggies. All in all, GREAT recipe... Officially added to my arsenal of quick fixes! :)

Almost No Fat Banana Bread

I've been looking for a healthier banana bread, and this recipe has done it for me! I did make a few alterations: I used 1 cup whole wheat flour and only 1/2 cup all-purpose, used 1 egg instead of 2 whites, substituted raw sugar for white and decreased the amount to 1/2 cup, added 1/4 tsp of salt, added a handful of chopped walnuts, and lightly sprinkled the top with quick oats before baking. It could have used some more bananas, but I'm perfectly happy with how it turned out. Other reviews suggested adding 1 tsp of vanilla, which I had every intention of doing, but forgot. I imagine that would have added a nice, new depth to the bread. This is a great, basic, and healthy recipe to play with and build from. It turned out great... right out of the oven and drizzled with a little honey :)
