TOOOOO DRYYYYYYY!!!! I followed the recipe regarding the amounts of wet ingrediants, however, it needed something added to it. Personally, I added a little more olive oil, with some balsamic. My sister added mayo instead, and seemed to like it that way too. Also, more olives and definately more crumbled feta next time. Other than all that, a great concept of a salad.

Mam's Black Cake

Didn't have any raisins, so I doubled the blackberries. First off, the cake was beautiful. Nice brownish color, with purple ribbons in it. EXTREMELEY moist. More so than I would've expected from the recipe (a good thing). Unfortunately, the blackberries seemed to be lost amongst the spices. Don't know if not having raisins did that, but I would think the raisins would compound the berry-loss even more. Definately worth trying again. Next time I'll cut the spices (at the very least the nutmeg and clove) in half and see what happens. And the part in the description about being taken from Mam's handwritten recipe collection made my eyes moist. I've got a collection of cards from my grandmother, who died a couple of years ago. Sometimes I love pulling them out and making what she made when I was a kid.

Herbal Tuna Salad

I've got to give this one five stars too!! Granted, I subbed yoghurt for sour cream, and soy sauce (with a couple dashes of tabasco), but I think it tasted pretty much as intended. Personally, I made it the night before, and we put it on toasted whole wheat bread. AWESOME!!!

Tartar Sauce I

Absolutely wonderful!! I needed a tartar sauce at the last second and found this one. Added a few dashes of dill too, but it certainly wasn't necessary. Will definately make it again!

Molasses Mistake Cornbread

I'm sorry, but this was just plain tooooo bitter! And I even added a little sugar to the batter. On the bright side I liked the texture. Maybe making it without the molasses wouldn't be too bad.

Easy Hummus

So I had this can of garbanzo beans sitting on my shelf and decided to make some hummus. However, it had to be something simple because I didn't have much else. I found this recipe and gave it a try. In all honesty I did stray from Erin's true recipe, but its close enough to say it was a GREAT basis to start with. I added some extra virgin olive oil (rather than the bean liquid) and salt. Instead of garlic cloves I subsituted 3 tsp of granulated garlic. Instead of the jalapeno, I added 1 tsp of cayenne pepper. After blending it all, I tasted it, and added a few shakes of spice as necessary. Also, its a good idea to cover this with plastic wrap and then allow it to sit in the fridge for at least an hour so that all the flavors can mellow and mix together!
