Creamy Black Bean Dip

Chicken Cordon Bleu II

FANTASTIC! Definitely double the sauce. I pound the chicken flat & roll with ham & swiss BUT forget the toothpicks. Use the metal poultry skewers for whole turkeys or chickens. They're easy to see & slide right out. I'll never use toothpicks again. Thanks for a fabulous recipe.

Horseradish Sauce

Cousin David's Slow Cooker Brisket

Truly awesome!! Couldn't be easier...put it on at 9am & it was falling apart tender at 6pm. I did put 2 sliced onions under the brisket & since I only had 1 bottle of chili sauce in the pantry. I threw in a can of beer. I really don't know how you can mess this up. Thanks for an great recipe.

Spinach Quiche

This was ok. I thought it could use a little more egg & cheese but a little less spinach. I did pre-bake the crust. You must dock the crust (prick it all over the bottom with a fork) to keep it from puffing up. Next time I'll try 6 eggs and I'll mix the cooled spinach & mushrooms with the eggs & milk before I pour into the deep dish pie plate.

Spinach and Strawberry Salad

Made this for our family's Annual Easter Egg Hunt. WOW - It was fantastic! I did cut the sugar by half & used the Raspberry Vinegar. I also used toasted sesame seeds. The strawberries were soo sweet & the baby spinach leaves to tender. I can't wait to make this again! It will be great to take to the swim club this summer! Thanks RobinV

Roasted Asparagus with Balsamic Vinegar

Made this for our annual family Easter Egg Hunt. This was easy to get ready ahead and as soon as I took out the ham, I turned up the temp to 425 & it was ready in just 10 minutes. Awesome flavor and I doubled the recipe - no problem!! This recipes a keeper! Thanks Natalie

Shrimp Scampi III

WOW! I've never made shrimp scampi before & now my family wants it every week. I used about 7 cloves of garlic (left them in) in the butter with a touch of extra virgin olive oil. Then I followed the recipe until after I cooked the shrimp, I added the zest of 1 lemon & juice of 1/2 a lemon. I only need a very small amount of bread crumbs to thicken the sauce. I also added about 1/4 cup of fresh parsley to the sauce. I had some frest asparagus I needed to use so I cleaned & quartered it. Then I steamed it above the pasta as it cooked. Once it was crisp tender, I stirred it into the scampi sauce too. Fantastic!! Thanks for a super fast & easy recipe.

Buffalo Style Chicken Pizza

This was awesome. Used Frank's Red hot and only about 1/2 bottle of blue cheese. Also used leftover rotisserie chicken which I shredded & a pillsbury pizza crust. Soooooo good! Next time I'll try Bill's Blue Cheese dressing recipe. Just add a salad & you have a quick & easy weeknight dinner! Thanks

BBQ Chicken Pizza

Fantastic recipe & sooo easy, especially if you use pillsbury pizza crust & leftover shredded rotisserie chicken!! Yum Yum. I even left off the pepperoncini & cilantro (my daughter doesn't like them) but I bet they make it even tastier!! Thanks for an awesome recipe.

Irresistible Irish Soda Bread

Awesome & so easy! A 5 star for sure! I did add 1 1/2 cups of raisins & baked in a round 8" baking pan (spring form works well too) I made 2 loafs (one with raisins and one without) to take to work. Both were big hits and I was asked for the recipe by 4 co-workers. It does get better with age and is excellent toasted with butter. Karin, thanks for a wonderful recipe!

Sarge's EZ Pulled Pork BBQ

Couldn't be easier & all three of my kids loved it. I had a large pork roast (bone-in). I didn't have coffee so I substituted a little beer (it's what we use to cook country ribs in) I also added the liquid smoke as suggested and a little creole seasoning on top. So tender and juicy, it doesn't even need BBQ sauce! Thanks Sarge, this is a definite keeper!

Cola Pot Roast I

Sooooo easy and soooo tasty. Even my nine year old said, "It's awesome and the only way I'll eat peas!" I didn't have celery or regular cola so I added a can of whole corn and Lesueur peas in the last 15 to 20 minutes. I also had some baby carrots I threw in along with some cubed potatoes. I used 3/4 cup of diet coke and 1/4 cup of red wine. The leftovers are even better!! Thanks for an great recipe! ;)

Cider Vinegar Chicken

For the ease and speed of preparation, I gave this 4 stars. I'd say the taste is more tangy than puckery (similar to salt and vinegar potato chips tanginess). I used legs and thighs so I cooked it about 45-50 minutes and it was still very moist. I also like the low calorie count but I agree the meal is a bit bland and lacking in color if you don't beef up the side dishes. We had sauteed spinach and portobello mushrooms, cranberry sauce, and steamed white rice (I also drizzled some of the juice from the chicken on my rice). My three kiddies and hubby liked too, so I'll be making this again. Thanks for the recipe.

Downeast Maine Pumpkin Bread

AWESOME!! And couldn't be easier. I made 7 baby loafs (5 3/4 x 3 1/4) & cooked it for 35-40 minutes. I added 1 1/2 tsp of vanilla and my secret ingredient 3 to 4 Tbsp of Jack Daniels (also great to add to pumpkin pie). If I don't have Jack Daniels, I substitute any bourbon or dark rum. The alcohol all cooks out but leaves incredible flavor! Try it!

Awesome Slow Cooker Pot Roast

This recipe turned out wonderful!! I too added 1 lb baby carrots, 8 small potatoes (quartered)and one large onion (chopped) to bottom of crock pot. I covered the veggies with 1/3 of gravy mixture (I used only 3/4 cup of water and 1/4 cup of conac) place the 3.5 lb chuck roast on top of veggies. I then covered the meat with remaining gravy and cook on high for about 5 hours. We all loved it.
