Fiesta Rice

Fava Bean Breakfast Spread

We liked this a lot - good filling breakfast! For myself, I would add more red pepper to give it more of a kcik, but that's just a personal taste. I would definitely make this again!

Emergency Chicken

This was great! As a new cook, I look for quick and easy meals to make after work, and this totally fit the bill. My chicken took a bit longer to cook, but that was okay. The sauce was good and had a nice little kick to it. I will serve the leftovers over rice for tomorrows dinner!

Easy Red Beans and Rice

As a new cook, I look for easy recipes, and this looked like (and was) a relatively easy dish to make. I used a can of diced tomatoes instead of chopping whole tomatoes, omitted the green bell pepper (my mom doesn't like them), and added cajun seasoning. It turned out a tasty meal that I will make again! Mom liked to too, so that was a plus!

Marinated Baked Pork Chops

Great recipe!, love the flavor of the sauce! I am a new cook, and am a bit perplexed. I make two pork loin center cut, bone in chope a few times, and they come out pretty good, but a bit dry. A little tough on the outside, but nice and tender in the center. I bake the pork chops (covered) at 350, but they are done after 12 minutes per side (internal teperatrue is way over 145). Not sure what I am doing something wrong that they come out a little dry and tough in some spots, but this recipe is a keeper!

Chocolate Mint Cookies I

I really like these. I am a beginner cook, and this was my first attempt at cookies. I did over cook some, so some came out crispy, and some came out soft, both are equally good IMHO. used the After 8 Mint patties and they melted nicely for the most part (some of the cookies were already cooling, so I put them in the oven a few seconds to melt the candy). I will definitely make this again!

Yummy Sweet Potato Casserole

Made this for a potluck, and everyone loved it. On the advice of others, I baked the potatoes instead of boiling. They didn't even need mashing, but mixed everything together wiht the electric mixer. I added 4 tablespoons of maple syrup on the advice of a friend, and also added a little cinnamon and nutmeg. I am making this for Thanksgiving as well. Thanks for a great recipe!

Dijon Grilled Pork Chops

A definite home run! I am a new cook and love finding different recipes to try. The sauce is excellent! I over cooked the pork chops slightly (my bad) but they were still very edible and tasty. I will try this marinade on chicken next!
