Chewy Sugar Cookies

These have great flavor, worth about 4 stars - buttery, sugary and just delicious. They definitely live up to the name of the cookie, as they turned out crisp around the edges and wonderfully chewy in the middle. However, I'd give these a two rating for presentation. Once out of the oven, they fell flat (some VERY flat) in the middle, so they look like little moon craters or something. A few stuck to the pan, even though it was greased. Overall, they don't look very good, but they taste great.

Cinnamon-Raisin Coffee Cake

I really liked this. I added cinnamon to the batter, which I think helped add to the flavor. It came out moist and tasty!

Cinnamon Sugar Butter Cookies I

These were just ok. The texture turned out to be too cake-like for my taste. I also think they need more flavor; they would be really bland without the cinnamon-sugar mixture that you roll them in. These are ok for now, but I probably won't make them again. (also, I baked them at 325 for 10 minutes because I thought 300 sounded too low for a cookie.)

Cinnamon Bread I

I should have paid more attention to the neutral/negative reviews for this recipe. I used about 2.5 tsp of cinnamon in the batter, and doubled the topping, but something in the flavor is lacking... I'm not enough of a baker to know what that is. I'm not a fan of the texture - it is almost chewy, and not what I would expect from a quick bread. I saw that another reviewer used this for bread pudding. I'm going to try that tomorrow, but alone this bread just isn't that great. I'm disappointed because I love cinnamon bread and it smelled so great while it was cooking.

Lemon-Maple Butternut Squash

Very good. This is one of the simplest and tasty ways I've found to prepare butternut squash. The lemon really brightens up the flavor, and 100% maple syrup is subtle but flavorful. I can't imagine that it would work as well with fake maple syrup.

Tres Leches (Milk Cake)

The flavor of this cake is excellent. I could eat the whole thing myself! The cake turned out a little more dense than I wanted. Next time when I make it I will try separating the egg whites from the yolks, beating the whites until fluffy and then fold them into the batter. I had to drain off some of the liquid, but I don't consider that much of a problem. It's better to have too much than too little! This is one of my favorites!

Banana Pancakes I

I don't usually like bananas, but I liked these. I used half oat flour and half white flour, and I added cinnamon and vanilla to the batter. They tasted similar to banana nut bread; I bet chopped walnuts would be good in these, too! Next time I think I will puree the bananas as I wasn't crazy about the little globs that were left in the batter after I just mashed them. I followed other suggestions and cooked them slowly over medium heat, and they browned nicely.

Peanut Butter Bars IV

I give these a 4 for just the recipe, but I'd give them a 5 with my modifications. The bar part was really good, very peanut-buttery. I left out the chocolate chips in the dough, but I did sprinkle some on top to melt and spread once I took it out of the oven. After it cooled, I made a frosting of peanut butter, powdered sugar, a little milk and a little butter. I spread that on top, then drizzled with more melted chocolate chips. The result was heaven! This recipe made a great base, but with the frosting and melted chocolate it was awesome.

Tuna Salad Muffins

I love tuna sandwiches, but I couldn't eat these muffins. I don't know if I did something wrong, but the muffins came out soggy, and if I had cooked them longer they would have been overcooked. I really wanted to like these, but they did not taste good.

Cinnamon Raisin Bread I

I couldn't decide between 3 and 4, so I give this a 3.5. I made this bread twice (no raisins both times). The first time, I didn't have any problems with the dough, but it came out bland. That's where the 3 rating comes in. The second time I doubled the cinnamon filling, using half brown sugar and half white. I used salted butter for the instead of unsalted (and added about 1/2 teaspoon salt to the dough), and I added about 1 tablespoon cinnamon to the dough. I also added a little more sugar to the dough. After all these additions, the bread was great! It wasn't bland, the filling was a stand-out, and it tastes awesome plain or as toast with butter. Also, the bread only took 30 minutes to bake each time.

Peanut Butter Cookies VII

Pretty good! I was looking for a cookie recipe that didn't require butter, and these cookies turned out well. I was worried because my dough was crumbly, but the cookies have great peanut butter flavor and are a good mixture between crisp and soft.

Orange Sauce Chicken

This review is only for the sauce. I used it with sauteed tofu and veggies over rice and it was delicious! After reading other reviews, I cut down on the sugar, using somewhere between 1/2 and 3/4 cup. It definitely was sweet (but not too sweet, I thought) and very citrusy!

Lentil Loaf

This looked a little unappetizing, but it tasted good. I seasoned the lentils with worcestershire and seasoned salt as they cooked. It needs some extra flavoring. It was good as is, but I like a lot of flavor, so next time I will add more worcestershire, a little more ketchup and sauteed onions, as another reviewer did. Then this recipe would probably get five stars!

Texas Enchilada Sauce

The flavor is wonderful, but I want an enchilada sauce that is thinner, saucier, like the kind on restaurant enchiladas. Next time I will either use two cans tomato sauce in place of the crushed tomatoes or thin it out with broth. Also, I used 1/4 cup chili powder because I didnt want the heat to be overpowering, and it came out just right!

Carrot Cake V

Great, but not the best I've ever had. I grated two carrots to add to the batter with the baby food, and I added some walnuts I had in the cabinet instead of putting pecans in the frosting. The cake is very moist, but I kind of wish I had used brown sugar instead of regular. I think that would give it the "something extra" I'm looking for. It really is good, but the frosting makes it great!

Delilah's Frosted Cut-Out Sugar Cookies

I used half margarine and half shortening. The taste was great, especially with frosting, but the dough was way too soft to roll out. I added an extra 1/3 cup flour, but that really didn't help the softness, and I was afraid to add more. Instead of rolling the dough out, I just made little balls and flattened them to circles.

Barbecue Tofu Sandwiches

Very good! I used tofu that I had frozen and then defrosted, and instead of cutting into strips, I crumbled it up. The onions add good flavor with the barbecue sauce, and this is very quick and simple.

Insanely Easy Vegetarian Chili

I didn't follow the recipe exactly, I just used it as a guide and threw in veggies I had in the fridge, some TVP for texture, etc. It's excellent! You could probably use whatever is around your kitchen, and it will be good.

Pumpkin Bread I

Great!! After I started making this, I realized I didn't have applesauce, so I went ahead and used vegetable oil. I also didn't have any walnuts, but I can't wait to make this again and add nuts, and probably raisins, to it. After reading the other reviews, I reduced the sugar to 2.5 cups, and it is perfect!
