Quinoa Pilaf With Mushrooms

great stuff, fabulous taste, but I used commercial vegetable broth, and even omitting the added salt this was waaaay salty!!!! Next time I'll try reduced sodium chicken broth instead, because it was simple enough and tasty enough to merit extra chances and experimentation.

Maple Baked Pork Loin Roast

update- the second time around went with the recipe as written. still didn't fall apart like the reviews said, but my picky husband was even willing to eat the leftovers. Sounds weird, ketchup maple syrup, and garlic, but following the recipe to the letter was waaaaaaaaaay better than subbing bbq sauce. Doing this again tonight, going to try to cook it longer and see what happens....

THE Pasta Salad

Great salad! The flavors blend incredibly well, and the hot sauce adds flavor without a bite. The only reason this didn't get 5 stars right off the bat is because I like more sauce in my salad- I'll try doubling up on the dressing next time.

Almond-Topped Fish

Holy Moly!!! I used Swai for the fillets, Cavender's greek seasoning and plain salt instead of seasoned salt, took other reviewer's recommendation of subbing sour cream for the mayo, and I forgot the Almonds, but WOW!!!! Incredible flavor. Easy to prepare, and everyone LOVED it! We just had a greek salad on the side to go with it. Thanks for an incredible recipe!

Basil-Tomato Tuna Steaks

made this on the grill-salt and pepper, 4 minutes on side one, flip, spoon on the tomato-basil mix (del monte diced tomatoes with basil and oregano, drained), put a slice of provolone on each fillet, 4 minutes on the other side, done, and absolutely delicious! Thank you for a great and super-simple recipe.

Absolutely Fabulous Greek/House Dressing

Made it- it's simple and easy. And holy guacamole, this greek dressing is INcredible!!!! I made jusr enough for one big bowl of greek salad- 1/3 cup oil, 1/2 cup vinegar, 1 tsp each garlic, basil, oregano, 1/3 tsp each salt, pepper, onion, and mustard. Poured it over my romano/cucumber/bell pepper/onion/feta/tomato mix and got a kind of magic!

Salmon with Lemon and Dill

I've used a similar recipe for ages, and I love it. For light summer fare, season the salmon itself with the salt, pepper, and garlic, place a few sprigs of fresh dillweed on top of the fillet, and lay lemon slices on top of it all, drizzle lightly with safflower or olive oil, wrap the whole thing in foil, and then bake or grill, and serve with a nice light dilled cucumber salad.... be careful not to overcook the salmon, at most altitutes 20 minutes is plenty, 25 may be needed above 5000 feet.

Pan-Seared Ahi Tuna with Blood Orange Sauce

3 minutes on each side is about right -depends on your preferences, I like my tuna fairly rare. Great sauce, wonderful flavor, easy to make. The tuna DOES get cold while the sauce is prepared, but the sauce warms it back up.
