Microwave Pralines

This is a great recipe - worked as is for me. I didn't change anything except I took it out of the microwave at 8 mins , 30 secs and stirred at 4 mins. I also stirred mine after I took it out and it started to harden before I had them all on the waxed paper. It's a lot like making fudge, you have to pay attention to the timing and consistency. Much easier than making them the old fashioned way!

Linguine with Clams

A reviewer states that the clams will become rubbery if cooked for 20 minutes - if they were fresh clams, this would be true but canned clams are not going to get rubbery from cooking. As a matter of fact because they are already cooked, brined and canned, they will become less rubbery as they absorb more liquid during the cooking process. One reviewer who as acutally made the recipe states this as well. This is a GOOD recipe! I didn't add mushrooms or fresh parsley (used 1 tsp of dried) and it was FABULoUs!! I also added a bit of kosher salt (1/4 tsp) to the clam sauce as it was cooking and LOTS of salt to the pasta water. It was perfect! Don't expect an alfredo style "sauce" that you are going to sop up with bread - that's not what linguine and clams is! If you like REAL linguine and clams -try this recipe and don't be afraid to follow it as written. I will make this again and again - we loved it!

Sweet and Sour Pepper Pork

I followed the sauce recipe as written and it was FABULOUS! I did make changes to other ingredients b/c that is what I had in my kitchen...I used chicken breast instead of pork and a mixture of veggies I had on hand - onions, celery, peppers, baby carrots and it worked very well. I will definitely make this one again!

1-Dish Taco Bake

I reduced yeast to one packet, topped batter with half pound of ground turkey mixed w/half package of taco seasoning then topped with leftover chili, a few sliced jalapenos, bbq corn chips and cheese. This was very good - whole family liked it - a little dry but much better if you top with sour cream!

Swedish Sticky Chocolate Cake (Kladdkaka)

This is awesome. I didn't change a thing and I have made it a few times now. It's something I always have the ingredients on hand for. I must say, although the recipe says let cool for an hour, we usually leave it for about 15 mins. In my family, if your not around shortly after this comes out of the oven - you lose!

Out of this World Turkey Brine

The results with this brine were excellent. This is definitely the best turkey I have made. I followed the recipe exactly, except used a mixture of kosher salt and sea salt. Next time if I am using this kosher/sea salt mixture, I will probably reduce the salt by 1/4 cup or so as the turkey was a little saltier than I would have liked - but noboby else thought so and everyone RAVED about the flavour and juiciness. I used a roasting bag to brine, as recommended - placed the bag in a foil roasting pan, added the turkey then poured in the brine. I then placed it on the roasting pan tray from the oven. Let it sit in the fridge overnight, stuffed in the morning, rubbed with canola, then roasted it at 450 degrees for 30 minutes, then 350 for 3 hours (it was a 19 lb bird). It was not difficult and the results were amazing. This is the only way I will be cooking turkey from now on.

Banana Cake VI

This cake is excellent! The only reason I am not giving it 5 stars is because it took a lot longer than 1 hour to bake - but maybe it's because of my oven. As far as final taste and texture it is definitely a 5 star recipe! Anyway it was moist and very light. I am not sure why some reviewers are comparing it to banana bread and saying it was heavy. I have made this 2X and both times it came out very light! I added an little extra banana and I mixed it with a stand up mixer - fabulous! We didn't even have time to frost it - it was gone within minutes of coming out of the freezer!

Baked Ham With Spiced Sugar Rub

This was excellent and easy - didn't have lime so used orange zest/juice which was excellent. The sauce this made was so good that I couldn't stop 'sampling'. I will definitely make this again.

One Egg Lemon Pound Cake

I am giving this 4 stas because it was so simple to make and very good. It was,however, more like a quick bread than a cake - hence, the instructions for cutting in the butter. I noticed some people decided to beat the butter with the sugar, as they would with a cake but I found it worked fine as written. Keep in mind that this method requires a light hand (as in making biscuits) so if you cut in the butter, I would recommend making a well for the wet ingredients and mixing only until blended. I did add a sugar and lemon juice glaze as recommended by another user and this did add a nice lemon flavour. Good recipe - will make again.

Coconut Cream Pie

Excellent pie! I made a few changes only because I didn't have all ingredients on hand. First of all, I only used half the coconut - but I did toast it. My daughter hates coconut and she loved this pie! I also only used 3 eggs. I used a whisk while heating the custard and I didn't find myself tied to the stove. Just whisk often on med-low heat. I had no problems with lumps or brown spots and I used a regular stainless steel pan. I made a meringue with the egg whites using a scant 1/4 cup of white sugar and mixing with the blender on high until soft peaks formed. I put it under the broiler for barely 2 mins to brown and it was amazing! Both my kids have been begging me to make it again!

Bechamel Sauce

This is a good basic recipe. The flavour is very delicate so if you like stronger flavour, add more seasoning. I like it as is because it can be used in many different ways without being overpowering. I like it tossed with cooked penne or rotini, frozen peas & cubed ham then topped with cheese and baked in a casserole until bubbly. Even the pickiest eaters will like this!

Red Velvet Cake I

I followed the recipe except I made cupcakes. They turned out perfectly and I received many compliments on the frosting. Make sure the flour roux is cooled completely and the butter is soft before trying to blend. some users said their frosting was lumpy - I used the mixer and blended the frosting until it was light and fluffy.

Costas French Market Doughnuts (Beignets)

These are excellent and can be frozen! I followed the recipe exactly except I cut it in half. This still made a ton and I had no choice but to try freezing them. I made sure they were cool and I did not add the confectioners sugar to the ones I was going to freeze. I thawed them in the microwave on med power for 30 second intervals and then shook them in the bag of sugar. They were perfect - just like the day I made them!

Brown Sugar Pie I

Excellent! If you are having problems with the pie setting, make sure you don't just "bring to a boil" as the recipe states - make sure it is a good boil (as in more than 1 or 2 bubbles!). Make sure you stir constantly and you will notice the mixture thickens to almost a pudding consistency and gets a little darker as it begins to boil. I baked it for 10 mins @ 400 on bottom rack, then moved to top rack at 350 for 20 mins. Other than that, followed recipe to a tee. I love the crispy top! =] Manifique!

Super Easy Jelly Doughnuts

OK...these were kinda amazing!! I was home alone this evening...craving donuts...but it was too late to make them. I stumbled upon this recipe and I must admit, I was skeptical when I read it. Then, after reading the first few reviews I decided to give it a try. wow!! am I glad I did! They are AWESOME! they really taste like donuts. I did stray from the recipe slightly, cooking mine between 325 & 350 as they seemed to be cooking too fast on the outside at 375. I then put some white sugar in a bag and gave them a shake when they were done. Of course I couldn't stop at one...I've already eaten 3 and poured a big glass of milk. If you follow the directions, you will not be disappointed with this recipe!

Salmon Dip

Fabulous! I made this with what I had on hand which meant omitting fresh parsley & pimentos. I also forgot to add the butter. I put this in a small casserole, topped with a sprinkle of parm and baked for 15 mins @ 350. It was a delicious hot dip. I used tostito scoops and crostini. Excellent!

Cheryl's Spinach Cheesy Pasta Casserole

We like this very much. My kids both ate it and my daughter was especially happy as she is vegetarian. I didn't make any intentional changes b/c I thought the recipe would work well as is. But I only had rotini on hand, so I used that instead of shells. Also, I used a canola/olive oil blend, seasoned bread crumbs and a combination of kraft 4-cheese italiano and cheddar. Spinach- cheese - tomato sauce recipes do not typically need a lot of additional spices and flavour. The point is to taste the spinach and not be distracted by other flavours that might over power.

Pizza Dough I

Perfect as-is...if you are in a hurry and still want real pizza dough taste, this is the recipe. I used fast-rise yeast and the crust was nice and chewy/crispy. We made half veggie/half anchovies and it even tastes good with anchovies

Vegetarian Tortilla Stew

This was excellent and the kids really liked it too. I didn't know what green enchillada sauce was so I used something called salsa verde...I'm thinking it's probably close the same thing?? Anyway, it turned out awesome with it. I used canned corn instead of frozen and black beans (what I had on hand) and didn't have the veggie chicken. Other than that, no changes and great results! I will be making this again and again...
