Brown Sugar Meatloaf

Loved this meatloaf! Even those in my family who don't really care for meatloaf liked it. I make it in a casserole dish with the sauce on top, bread in the bottom to soak up the grease. Also added extra garlic and some worcestershire to the meat.

Unbelievable Chicken

I made this tonight for my boyfriend, and he loved it. I cut the chicken in cubes, marinated from friday night until today (sunday). Made kabobs with red, yellow, green peppers and baby portabella mushrooms, grilled until done. Served it with jasmine rice and green beans. The only change I made was to add a bit more brown sugar and tablespoon of honey. So tender and the flavor was deep into the chicken. Definitely a keeper!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

I gave this recipe 5 stars after tweaking. I sauteed onions and garlic in olive, added salt & pepper. Mixed with spinach and blue cheese. Added freshly ground nutmeg and finished off the recipe as stated. Next time I will cut a pocket into the chicken breast and stuff. Was too much stuffing and they didn't look nice, but tasted yummy!Definitely a keeper!

Slow Cooker Chicken Stroganoff

I changed the recipe a bit. I used one can cream of chicken, one can cream of mushroom (both 98% fat free), thinned it with 3/4 cup College Inn Culinary Broth (white wine & herb) and added the dressing packet. Put it all in the crock pot with 6 whole chicken breasts. Let is slow cook on low for 4 hours, shredded the chicken, added 1 1/2 cups frozen sweet peas, cream cheese and slow cooked another hour, finished it off with two big dollops of sour cream. Served over noodles...what a hit, family loved it!!
