I was looking for a healthier alternative to delivered (deep-fried) buffalo wings, and this recipe came very close to being 5 stars, however, it left me wishing for a slightly stronger flavor. Next time I will try adding more cayenne pepper and possibly garlic powder. I followed the advice of many, many reviews that said you should dry the wings before putting them in the bag with the dry seasoning mix, so that it sticks better to the wings. I measured the butter and placed it in a glass bowl and put it in the microwave for 30-45 seconds in order to melt it. Because the recipe says it's for 20 wings and I had a little bit more than that I was concerned it wouldn't yield enough for all the wings, so I decided to double the recipe. I had a lot of flour and butter/hot sauce mix left over, so next time I am going to make the wings without doubling the recipe to see if that is enough, I'm sure it will be. Don't forget the blue cheese dip on the side!
