About this Cook
My favorite things to cook
Any thing on my Weber charcoal grill, From Jalapeno cornbread to Apple/Hickory smoked Thanksgiving Turkey.
My favorite family cooking traditions
Every year growing up in CO. My father always smoked our Thanksgiving Turkey on Weber charcoal grill (in freezing winters of Colorado) It took the better part of 8 hours, My brothers & I would stand out in the garage as he would scurry out to the grill to check the turkey & run back in. It was alwasy delicious. Mom of course warmed the kitchen with smells of pies and casseroles. Now a father of 2, i continue the tradition, of course we have are fortunate enough to live in warm sunny California. Its not the same grilling a turkey in my shorts in the middle of Novemeber. The smell of the smoked turkey still ignites my childhood memories. My father taught me most of what i know about grilling, and now I can see his pallet light up up when I serve the Thanksgiving Turkey.
My cooking triumphs
For my daughter 6th birthday, I decided on a whim to make Cake pops for her kindergarten class. We wanted something simple not too much sugar ( cake pops are like a bite of cake)& Fun.. I spent the week before making practice batches, the 1st batch of cake pops resembled a grayish~purple looking "Grover Heads" as my daughter so lovingly called them. After the practice run, I finally learned by using a makeshift double boiler on my stove to keep the dipping chocolate warm. They turned out amazing. All the Mommies in my daughters kindergarten class were impressed, they thought the cake pops were store bought. I had decorate each of them and wrapped them in their own little plastic lollipop bag complete with name tag & bow. Every year my wife always made a beautiful cake so i wanted to make something and the cake pops were a home run.

Lemon Garlic Tilapia
Love the simple prep. My young children love the taste not too much spice. I add Old Bay and lemon pepper.

Easy Baked Tilapia
Excellent simple recipe for Daddy's dinner night. My young children love this fish over a bed of steamed brown rice. We love the Old Bay ( I used Old Bay Blackened season for my wife & I) My simple variation was to melt the butter down, lightly brush the fillets with butter/garlic salt mixture. Add lemon pepper to taste.
