Chicken Enchiladas II

Very bland. I added another can of green chilies and a jalapeno to add a pit more to it, but it was still bland. It wasn't bad, just not worth all the great ratings this has received.

Creamed Chipped Beef On Toast

I increased the sauce as some others did and this turned out perfect! I've made this before several times, but never with the cayenne and it made a wonderful difference. I also like to put some scramble eggs on top of mine too...just another little touch that makes it better.

Roast Sticky Chicken-Rotisserie Style

You can't go wrong with "Low and Slow" cooking chicken like this one. For the person with the dry and tough skin: perhaps you should have your oven calibrated. It is common for chicken skin to get tough when smoking at 225 or lower, but is eliminated when I turn it up a bit. I put mine in a brine overnight to really infuse the flavor and then added the spices before I cooked. It came out wonderful. Great for winters when you can't smoke.
