Zesty Coleslaw

This coleslaw was a hit with everyone. I only used 1T of sugar but next time will go without as it was sweet. I also subbed Greek yogurt for the mayo. Next time I will try to add a little lime juice to the mixture as well as sneak in some shredded apple and jicama.

Crustless Spinach Quiche

So yummy! I made mine in muffin/cupcake pan for individual servings and it was awesome. I think my husband ate 5 of them! Now I have several for breakfast this week. I also added a small can of mushrooms to the onion/spinach mixture.

Stuffed Peppers

Wow! This recipe was a hit! I followed a lot of suggestions other posters had and the peppers were seasoned bautifully. I did the following: used ground turkey instead of beef sauteed one onion w/ garlic and added to stuffing added some chili powder and paprika to the stuffing doubled the worcester used 25 oz of pasta sauce (1/2 in the stuffing and 1/2 on top) used shredded cheddar cheese in the stuffing baked covered w/ alum. foil and removed the last 10 minutes of baking My husband loved this recipe and ate 2 in one sitting! He did suggest adding some cheese on the top. Next time I will probably do that in the last 10 minutes of baking.

Baked Potato Pizza

I decided to search out a Potato Pizza Recipe after missing my old pizza place in my old town. This recipe was very close! I decided to use fresh dough from Publix (already made in a ball). I baked it at 450 for 7 minutes until it was a little brown. Then I changed the temp to 400 and baked for 15 minutes and it came out perfect. I think one of my potatoes was a little too big as there was quite a few on there which seemed to dry it out a little. Next time I might try and cut the potatoes like scalloped potatoes as that is how it was at the restaurant. Husband says it needs more bacon - but he loves bacon! Will definitely make again!!!

Melt - In - Your - Mouth Shortbread

So easy to make and yummy. The only reason it got 4 stars instead of 5 was because it is so crumbly! You have to put the whole cookie in your mouth or you will lose the whole thing to crumbs.

Key Lime Pie VIII

This pie was delicious and so easy to make. I did a few things different to make it a little healthier and my husband couldn't even tell it was low-fat! I used a reduced fat graham cracker crust, sugar free vanilla pudding, low fat cool whip, and fat free sweetened condensed milk. I will definitely make this again and again!

French Toast Souffle

I made this for Christmas and it was delicious! I followed TROUT'S tips from below as well as added fresh blueberries to the bread mixture. Next time I might try fresh strawberries instead. I think this would even be good with some chopped pecans.

Baked Beans III

I made these for 4 of July and got so many compliments I made them the next weekend! I also decreased the amount of brown sugar and used Bush's baked beans. Everyone loved them!
